Easiest, cheapest, and possibly the healthiest stovetop mac n cheese recipe on KZread. IDK, I haven’t tried them all. But as weird as this one ingredient sounds, it somehow just works!

⚪FULL RECIPE⚪
~ INGREDIENTS ~
- 170g macaroni noodles
- 70g mild cheddar cheese or other soft cheese
- 2 egg yolks
- salt to taste
~ INSTRUCTIONS ~
- Add noodles and enough water to just cover in a pot
- Turn to high heat on stovetop until water is boiled down, thick and starchy
- Let noodles cool for a minute on the stovetop
- Mix in shredded (or crumbled) cheese and the yolks until incorporated
- salt to taste and serve

    Stuff like this is why I love your channel. I never make Mac because I don’t feel like using half a can of evaporated milk that I never have on hand. Now I know I have everything I need anytime. It was delicious btw! Threw in some Dijon and some chicken breast as an upgrade.

    I have a large family, so I tried this, but increased all the measurements, not exactly, but close enough and it worked well! 1 lb pasta 8 oz cheddar cheese 6 egg yolks Salt to taste Thank you, Ethan!

    This is absolutely phenomenal. The egg really tops it. I don't eat well as I am lazy but this. THIS. perfection, and I get some protein in. I use the egg whites for scrambled eggs in the morning and I make this for carry to work

    You should look into Sodium Citrate. Its the emulsifying agent used in processed cheese like Velveeta and Kraft that makes it so melty. Essentially, a small amount of it in water will take nearly any type of real cheese and turn it into a velvety smooth sauce when melted. And for people weird about additives, Sodium Citrate is just the salt form of Citric Acid: the only concerns with ingesting it are the same for ingesting table salt, and you use a very small amount for the desired effect in a whole pot of mac and cheese, around half a tablespoon spread out across 5 - 6 servings.

    LOL. I was so grossed out at the notion of drinking egg whites raw, that I ignored the lack of color in what you drank. I laughed at this trickery, haha! 😝 Super intrigued by this recipe and will certainly be giving it a try!

    Yeah, give the cottage cheese a try! It might take some work though. Or, if you don’t mind the disodium phosphate, use evaporated milk to emulsify.

    The pasta is scalding hot still by the time you add the egg yolks! 60-70 C is the sweet spot for pasteurizing eggs. It's more like a custard than a fried egg in terms of doneness, but still safe. ❤

    What's your take on "enriched" flour and grain products which add synthetic B vitamins like folic acid (instead of naturally occurring folate found in other whole foods in a balanced diet)? The pasta in this video has those synthetic B vitamin ingredients added. Have you considered putting those ingredients on your list of "avoids"? I have been trying to use pasta with an ingredients list like this: "Ingredients: Durum Wheat Semolina" and nothing else.

    Dude…Off the chart delish! I only used 1 egg yolk as I had less pasta available. I’m just curious as to the actual healthiness of pasta. Isn’t that a processed food? Limited ingredient but still processed. Your thoughts…

    Great question! It is processed, just not ultra-processed. All foods are processed to some extent, except fruit that you directly harvest yourself and eat without any preparation (technically speaking). There’s nothing wrong or unhealthy with food processing. It’s really just another way to say “food preparation”, like what you’d do yourself in your own kitchen. Cutting a lime or cooking chicken are both forms of food processing. The very flour you would use to make pasta from scratch was made from processing wheat. That being said, any amount of processing that is done to food to prepare it for consumption without totally removing it from its original natural state is generally going to be healthful. And, any food that is transformed into something far from its original natural state can be considered ultra-processed and, likely, to be less healthful if not unhealthy. If you look on the back of the box of any basic processed pasta product like the one I use in the video, you see that there are only a few natural ingredients and nothing else. (The enriched products are another story). I wouldn’t consider pasta like that “ultra-processed”, as it is still pretty close to the original food source in terms of composition. Conversely, a can of Chef Boyardee ravioli is ultra-processed because of all of the highly modified food products that are put into it to yield the food product. Essentially, there is a continuum of degree of food processing that every healthful food falls onto. Some foods that are healthful are highly processed, others are minimally processed. Then there is ultra-processed food in a category of its own. No ultra-processed food is healthful. What I’d recommend to you to simplify things is this (this is what I do): if a food or food product has anything other than basic ingredients (wheat, water, salt… tomatoes, milk, cream, enzymes…), research those ingredients. Search them on google along with the words “health effects”, and determine for yourself if what you find is okay with you. If you don’t like the sound of an ingredient that isn’t like one of the basic ones I listed above, don’t eat the food products that contain that ingredient. Instead find alternatives or find ways to make those things yourself. Who knows, you might just start a KZread channel one day… 😉

    Awesome! And glad you enjoyed it! And, yes, it reheats wonderfully from my experience. Just about as creamy as when you first made it. I like to add a splash of water before I microwave it just to help rehydrate the sauce, microwaving it for only a minute and a half or so. Let me know what you think if you give it a shot!

    @@bellenesatanwhat studies? what control groups? are these groups studied eating massive amounts of cholesterol? eggs have 200mg cholesterol. when cholesterol enters the body, it turns into LDL or HDL, which depends on many factors but mainly on how much you work out.
