Simple Okra: How to Cook Okra Without the Sliminess

Not fried. Not stewed. Just clean & fresh okra with a simple recipe for reducing the sliminess, on the stovetop, without dunking it in a deep-fryer. If you want a simple way to prep okra, and how to cook it for its natural flavor, try this. I don't mind the sliminess (it's healthy & can thicken dishes) but it's a big turnoff for a lot of folks. If you're new to the vegetable, a clean saute may be the best way to experience the flavor & texture. Okra must be cooked within two days of buying it. It will go bad quickly. I'm from Mississippi where okra is standard fare. But even I shiver at the sight of slimy, boiled okra oozing its way out of a jar. So, I understand the hesitancy to try the odd vegetable. I like its clean flavor. It's unlike anything else.
Here's my recommendation for trying okra without the sliminess:
1. Slice the okra in even pieces.
2. Heat a skillet to hot & add oil or ghee.
3. Add the okra & let sit until brown on one side.
4. Stir okra & add salt.
5. Keep sauteing until other side browns.
6. Salt & pepper to taste.

    I love Okra myself. And I grow my own. One way that many people don't know about is when the okra is young and small, you can just eat it raw in a salad or added at the end of a stir fry. So tender when they're under about 1 1/2 inches long.

    I cooked my home grown okra like this except I used a little bacon grease. Then threw it in to rice with powdered curry, green beans, and bacon. My family, who does not like okra, really liked it this way and ate it all! Thanks for the great tip for cooking okra in a way that makes it significantly less slimy!

    Thank you very much! I have some gigantic okra in my grow lab and I've never grown or eaten before so I had to figure out what I have to do with them. I will try this stir fry method, I found lots of other recipes, but really just want to experience okra by itself first, this is simple and straightforward and very appreciated.

    Loved your video. Being from the south, I love okra, too, but not the sliminess in some of the ways it's cooked. Still remember Granny's fried okra recipe with the cornmeal batter. Can't wait to try your recipe without all the fuss....thanks for sharing.....!

    I just made some okra and it came out fantastic. I cut onions, with garlic, ginger, and some olive oil separately on a different pan and added some paprika on the onions. They came out golden and sweet. As for the okra i cut them almost the same way as you did but made them a little more crispy. Added plenty of salt, peppers, and seasoning. Added it all together with some sliced tomatos. Steamed it a little bit and then a little more crispy burn. Came out beautiful just a little too spicey id say but tastes great!

    First time okra cooker here. Just cooked some this way, for the first time and am about to try the first bite as I write this ... There isn't much slime, the flavor is mild, resembling a zucchini. Very good!

    Thank you so much for this! I have grown to like okra over the years just realized that it was just prepared in a way I did not like in my youth so that is why I detested it! I just made some succotash and cooked the okra separately as you did in this recipe and added it at the end. Perfect! I fou d myself nibbling on them while cooking the rest of the meal. I especially like the fact that there is almost no oil in the prep! You are also correct they can hold salt well and tasted superb!

    Brownie02134 it’s super easy to “enhance” the snot aspect of okra, even accidentally! My grandmother would boil it and store it in jars. Then pull them out one by one, letting all that slime just stretch out. And then she’d swallow it whole. After that vision, I don’t know why I still love okra.

    The first time I used okra, I didn't know any better and cooked it whole, tops & bottoms snipped off, in a curry. There are one-off culinary experiences that will never be repeated and that one was delicious. If I have one word of advice for amateur cooks, it's to write down what you're putting into a dish every time you light that stove. You may never capture that wonderful goodness again.

    Hi. I'm from S.C. I grew up on either fried or boiled okra. Didn't eat the boiled, but loved it when mother fried it with self rising flour. No corn meal. Some cut pieces were like popcorn, while some times it was a pan full (all cooked together). Love fried okra. But the corn meal now is corn meal mix, so I will use it, SOME TIMES.

    Okra has a texture problem for most folks! To get around the slime problem, two tips: First: buy small okra (thumb size) -- it's way less slimy. Second: marinade in acid: after chopping in half-inch rounds, marinade in vinegar (apple cider, red wine, etc as appropriate for the dish) for half an hour -- this coagulates the slime.

    @Lara Gravenor Yes, you chop it into pieces about 1.5 centimeters wide; you can also just chop off the top and bottom of the pods: as long as the vinegar is able to well penetrate into the inside of the pod.

    I love okra, back in East Africa, we grew them in our farm. I normally cut okra in half, fry in onion and a teaspoon of curry powder.

    It’s only gonna be good in a stew or soup. When I make gumbo I use frozen and I’ve cooked it straight from the freezer and thawed it. It disintegrates either way.

    I par boil my okra, then I pour the first water off and rinse I add my cut up my onions to the pot with just enough salted water to cover the okra and onions. It comes out perfect.

    I am Montagnard indigenous live in North Carolina okra not my favorite but I love the flowers so beautiful. I bought the seeds from Home Depot I sent to my sisters in Central highland they planted grown very tall their children love to eat .

    VERY interesting! I haven’t heard of drying them before. I’m working on a Pakistani treatment (bhindi) that cooks okra in a lot of onions and is eaten with bread usually.

    Jenna Edwards I’m pretty sure it would be good fried. I’ll be using it because it’s one of the best lectin trapper. I stopped eating full of lectin food like whole-wheat bread, peanuts and cashews. The little that I have will maybe be caught by okra.

    Grew it when I lived in Florida. Most underappreciated veggie. Great in soups or on top of mashed potatoes. Nice flowers. Steady producer. Nutritious. What's not to like?

    @@CookingCompanionTV Great date gauge. Serve okra: if they balk- catch and release, reset hook and make a new cast cuz they're not a keeper. That's been my rule. I have it tattooed on my bicep.

    Not “need” no. There are ways to ‘not activate’ it without adding anything.

    Is okra still good to cook if the seeds are brown. I've never experienced a batch where the majority of the seeds are brown.

    Who else finds Jenna Edwards lovelier than okra?!! 😍 One best way for okra as an side dish. 1. tbsp portions of Garlic, ginger and diced onions(4) with pepper, salt, cumin and dry chillies with tomato juice (each tsb to tbsp). 2. Shallow fry the above first and add okra, make sure it is half cooked to retain its crunchiness. Or okra can be half steamed and shallow fried. 3. Boiled rice with this above dish is an good food/snack meal.

    No, I eat okra expressly to get the slime which is a fantastic healthy aid to digestion especially if you have IBS. The slime is what makes okra notable for reducing cholesterol and of course it's valued for thickening soups. I love the texture it adds and would not dream of cooking away the vitamins and slime. Cook only until it is tender, then serve. My last bloodwork pleased my doctor as my cholesterol dropped, my only change was eating more okra. It is so versatile in many dishes.

    My favorite okra dish I came up with as a simple bachelor meal is a pound of US farmed catfish nuggets, a can of diced tomatoes with green chilies and a scoop of cut okra simmered together. The okra thickens the dish and sits well over rice, another great sources of fiber.

    Wow, Jenna, you certainly don't sound like someone from Mississippi! Or is that just because I watch too much TV and movies? Maybe I should actually go visit the state and find out.... ;-) While searching KZread for recipes, there was not a lot of variety for okra. Mostly sauteed alone or with tomatoes, fried or deep-fried, or in a curry (Caribbean or Indian). Is that all that one can do with this vegetable? It has amazing nutritional properties, so I'd like to buy it more often, but I'm not very creative in the kitchen. Any help is welcome!

    Ha, hi Jim!! I’ve had enough time out of the state to work out the obvious clues. Your observation about lack of variety is spot on. The slime limits the number of appetizing ways to cook it. Stewing it with tomatoes or sauces makes use of the slime to thicken the entire dish.

    I've only ever eaten okra covered in batter. Then one day I tried it sautéed. The flavor was way better. I was tasting okra not the batter. My grandparents grew okra in their backyard. It's a tough vegetable plant to pick.

    Yep! While I love a good fried okra, sautéed is pretty good too. My grandmother also grew her own vegetables but I didn’t have to pick the okra. Just cream the corn and shell the peas.
