For this #glutenfree hot sauce
30-35 hot peppers (as described in the video)
2 head garlic (12-16 cloves)
6 limes
1 teaspoon salt
10 leaves shado beni (culantro)
3/4 cup white vinegar

I was making a very spicy Nigerian sauce and wish I had that warning of gloves. So I cut it up and washed my hands, thought it was fine but boy was I wrong. A bit of the pepper juice from moving the knife was on my finger and I touched my lip by accident. From my nose to my chin and cheek to cheek turned blistering red and I thought I would have to go to the hospital.

Very good! I like the taste of the shado beni in it! By the way, I bought shado beni and kept the lower leaves, soaked them in water til they have some roots. Only one or two had strong roots so I planted them directly in my garden and they grew so strong and prickly!!! They're now making seeds so I transplanted it into a pot and brought it indoors. Hopefully, I can get some seeds to plant next spring! So happy about that ! Gatineau, Quebec
Just made up at batch of this, it's amazing. I only used scotch bonnets and had to use cilantro. Super hot and packs some amazing flavour. 👏🏻

Making this today! Haven't had pepper sauce since I was a kid. And I just found culantro in my local Asian market too. I never knew the peppers were raw and I'm here for it! Thanks Chris.

Florida native here, many, many years ago my mom put up some local peppers, the poor Wisconsin girl had no clue. She didn't wear gloves and wound up in the hospital!

Made a batch last week. I use tomatoes with the peppers....perfecto!
Bajan here, I love your version. Also I love the fact that you have a variety of peppers. I do the same thing. I just ordered some ghost pepper seeds, can’t wait to make pepper sauce with them.

@@badouribrahim7287 Ghost peppers are a new breed of peppers introduced by " Smoking Ed Currie", he's also known for the Carolina Reaper pepper. It is supposedly 3.1 million on the Scoville Heat test. So I ordered some seeds from rareseeds.com

My co-worker gave me a bunch of Trinidad Scorpion Peppers and I tried making this. Always been a fan of spicy food, but this stuff kicked my ass. (Loved it, though. Thanks for this.)

have you ever cut pepers and let then sit and ferment before adding the lime to stop the fermenting process ans if so what are your experiances ?
Also do you save seeds from your peppers for next season?

Looks great, but I can't get hold of the apparently very tasty seasoning peppers in Australia. What alternatives would you recommend to maximise the flavour of this hot sauce you are making? My suggestion might be a chopped roasted capsicum (bell pepper in your area).

Try Joe E Parker or Big Jim, I believe those are available in Australia. I personally believe bell peppers are not suited to use in pepper sauces.

@@rickpratchett6758 Nice, ask for Pimento (NOT Pimiento). They are two very different peppers. Pimento is very flavourful, not hot at all, we in the Caribbean use it in meat dishes, fried rice, scrambled eggs or any other vegetarian dishes.
