Begin by washing and drying your shrimp, set aside to come to room temperature and season with salt and pepper to your liking and about 1 tsp of chili powder and 1 tsp of lemon pepper (per 1 pnd of shrimp) and set aside.
For your chipotle salsa boil 2 roma tomatoes and 4-5 dried chiles de arbol, boil for ten minutes and then allow to cool down. Once cooled add to your blender along with 1/8 of a yellow onion, 2 fresh whole garlic cloves (peeled) 1/2 tsp of Mexican oregano, 3 whole chipotle peppers (from a can in adobo) salt to taste (1/2 tbs is fine) and blend until smooth. Set aside or store in the refrigerator for a better taste.
At this time you can also cut tortilla rounds using corn tortillas (or you can also substitute using tortilla chips (the homestyle kind). Fry your tortillas rounds in canola or vegetable oil until a light golden brown. Set aside to drain excess oil and allow to fully cool.
For your guacamole, cut 4-5 large avocados and add to a bowl along with the pit so that your guacamole does not turn brown. Add a diced roma tomato, a handful of diced onion, 1/2 chile serrano (minced) salt and pepper and a squeeze of fresh green limes. Mix well and set aside in the refrigerator until needed.
To cook your shrimp, add olive oil to a pan, cook your shrimp on medium to high heat for about 3-4 minutes on each side or until fully cooked. Cook in batches in order to avoid overcooking.
To assemble tostada bites, layere your fried tortillas (tostadas) add about 1 tbs of guacamole, your shrimp and garnish with your chipotle salsa, cheese, and freshly minced cilantro. Serve immediately and enjoy with your guests!
