PIG FACE
1. CBD PROVISIONS
ADDRESS: 1530 Main St, Dallas, TX 75201, United States
INTERVIEWEES: Chef Peter - Executive Chef & Chef Coner Seargeant - Chef De Cuisine
🐮 COW TONGUE CARPACCIO: Brine the cow tongue for seven days. Chop carrots, celery and onions and add to a big pot. Pour in chicken stock and bring to a simmer. Add cow tongue and allow to simmer for 3 hours. Remove and peel membrane. Refrigerate for at least 24 hours to make it firm. Remove and slice. | Assembly: on a plate, lay down tongue. Add a haresa emulsion. Add caper pepper salsa (mixture of caper, peppers). Add onions, fried garlic, marion salt and fresh herbs.
🐷 CRISPY PIG HEAD CARNITAS: Remove the hair with a torch. Remove the glands. Place the pig face in the steamer and allow it to steam for 12 hours at 180F. Prick the pig head. Spray the snout and ear with cooking spray and wrap with tin foil. Place in the oven. Roast for 3 hours. | Assembly: Place on a wood cutting board and serve with a side of green and red salsa, pickled onion and tortillas

    Saw this and had to try it. Took my mother for mother's day. I will say it was as good as it looks in the video. The skin was super crunchy and the fat underneath literally just melted. Also, the eye was great, the meat behind came out with it and it was probably the best bite of the whole thing. It was very tasty and a great experience.

    You Tube is a business . Sonny gets a lot of money by making videos . If we didn’t watch his content , he wouldn’t make money . And he gets sponsors because of us , his viewers .So he’s not doing us a favour . And he does thank his viewers , which is good. It’s a good channel , well edited and filmed and great content . Sonny and his team do a good job! His personality and approach to different cultures is great !

    I totally agree and I'm American. Unfortunately where I am hardly any restaurants serve it. I've had tongue tacos and a yummy tongue sandwich from a Jewish deli here that recently closed down (which made me so sad.)😣 Hopefully another place will realise how good a cut of meat it is and serve it.🤞🏻

    Such amazing meals... made from the lesser used parts (in my country). I always crave for food like this, because these "gross" parts are, what my grandparents ate when they had nothing else and they knew how to make it tasty. Surely they didn't know "Wagyu Beef Tongue Carpaccio", they just boiled it in broth, made it aspice, blood sausage... and loved it. I am amazed, that people nowadays rediscover these (tasty) parts. An animal died for us, we have to honor every part of it and be thankful. Cheers to Sonny (and your team) for the amazing videos! Keep up the good work!

    Agreed. Even the parts that humans can't eat can often be repurposed to be safe for your pets. Their stomachs tend to be sturdier in some ways. Whenever I get a rotisserie chicken or fried chicken. I eat what I want. Then the next day or two I'll go in & strip every bit of useable meat from right against the bones. I keep the prettier pieces for me & stick the rest in a Ziploc for my cats to eat as treats. I don't give bones though. Period. Makes good bone broth though.

    Amish grandparents. We ate the tongue and loved it; made stomach stuffed with sausage and potatos, ate brains and eggs. The organs were the good bits. Heck yes I'd go for pig face!

    I've been subscribed for years now. I LOVE this channel. Even though you've eaten some wild stuff, it ALWAYS makes me crave it. I've had a goat head soup and really wanted the eyeball.     My best food experience during my time living in Hawaii was feasting on the pig head from a real family birthday luau where the pig had been roasted on the beach in the sand. It was phenomenal and I always tell everyone that the very best part of the pig is its head! 🥰

    Here in mexico we have specialty "taquerías" that serves one, two and sometimes 3 types of meat. In the northeast were i live there's "tacos de barbacoa" (slow-cooked meat) tacos from the head of cow's and/or sheep, "tacos de cabeza" (slow cooked meat) tacos from the head of pig, and also "tacos de tripita" (tripe, gut) tacos from cows. The quality of the dishes varies but you will always see the best places with a lot of people eating in them.

    we have that in the philippines, it's actually quite common. we call it maskara. beef tongue in creamy sauce too is common here. but man wagyu tongue has got to be a huge step up.

    I remember seeing a whole cow's head for sale at our city market when I was a kid. The skin was removed so it looked very alien. I was not grossed out by it because my father had raised me to appreciate food from other cultures. We ate cold cuts like souse so I understood where meat came from and that it was all delicious.

    This took me back to my childhood Christmases. Pig head and cow tongue was standard on the Christmas table. It's fun to see old foods coming back in new forms. I would definitely have both of them, but I would ask them keep everything on the side for the tongue.

    Amazing episode BFER folks. Have had plenty of pig roasts where you can eat what you like and some of that head meat is delicious. Although you guys took it to the extreme. Cheers for the TX chef for putting it out there.

    For us natives on Borneo island, pig heads are celebratory food, especially during the harvest festival in June. My non-Bornean friends are usually very turned off when I tell them this but I'm glad to see there's someone on the other side of the world trying to do something about it :)

    That's interesting. Philippines have the same thing, we call it "crispy ulo" and it's cooked for celebrations aswell. I wonder if Malaysia or other neighboring countries have the same thing.

    It's the tastiest part of the pig.. that's the best part to put on the oven and grill... we make that for sisig in the Philippines.. I love Mollie, she's so cute and trooper as well.

    I absolutely love ox tongue. My whole family was raised to eat it. If cooked long enough, its surprisingly tender and has a lovely taste.

    I was tricked into eating a cow tongue Taco with onion and cilantro. It literally is like a steak that melts in your mouth. Sooo delish. I ate three and after my dad informed me what it was. Didn’t change a thing. It was delicious 😋

    The pig head reminds me of Cebu lechon head with super crispy skin and from which you can also make other dishes out of. Yum!

    Twisted Oak Tavern in Agoura Hills served a similar dish. It was called hogzilla. You could order it the night of, but it was an hour wait. It was delicious. I had it a couple times, enough food for 4.

    You gotta do more vids with Chef Mollie! She and Sam have some of the best on-screen chemistry and she adds a lot to the review of the food. And I just loved the look she gave him at 9:50 when he tried to say "tortilla" in a Spanish accent! 🤣
