Tossed the potatoes in olive oil, salt, pepper, paprika and thyme. Laid them out on a sheet pan. Placed the pork tenderloin on the potatoes and coated them with a custom homemade rub. The rub is made from salt, pepper, paprika, chili powder, oregano and garlic powder. Placed the pan in the oven. Cooked it at 450F for 25 minutes and then at 400F for 10 minutes. Finished it off with freshly squeezed lime juice.
