I know so many restaurants back home in Palestine that need to see this video!! and more than a couple of them here, stateside ...this video was very well made, and truly informative. I have to admit I was unaware of few of the details from prep to storage that this video provided, and I thank God that my ignorance never caused a health emergency or that i never received complaints about the food quality, because improper storage of partially cooked meat. Thank you for not only making a great product, but making sure the product stays great,,from fridge to fork! Forgot to ask...you mentioned smaller diameter goes on top but I often see gyro/shawarma cones roasting with the larger diameter on top (following the angles of the boirler). Is there an advantage to either?

Hi chef Leo. I've recently started using GD products and am about to add the chicken shawarma to our on-site catering menu. The beef/lamb gyro was very simple and quick to cook on high heat but I'd appreciate your recommendations on the chicken shawarma as I've been advised to use a slower roast. Since we will be going straight from spit to plate or warmer (no grill), about how long would you say each layer should roast if I'm using an Autodoner G300 propane unit outdoors? Also, we are near max heat with the beef/lamb gyro but would a medium range heat be okay for the chicken shawarma? (low heat doesn't seem hot enough). Thank you in advance, Payman

Hello Payman, I want to Thank you for watching our educational video and for asking the following questions. In regards to the chicken shawarma question, I don’t see any issue with cooking the chicken shawarma at a “slower” pace as long as you keep constant heat on the cone itself and you verify the cooked chicken pieces reach an internal temp of 165 degrees prior to serving. Each layer should take roughly 12-15 minutes at a medium cook temp. The cook time will also depend on the weather outside, if it is a cool day and or if it happens to be windy the outside elements could affect the cooking process. The reason the smaller diameter of our Shawarma cone goes on top is because the layered slices of raw meat are stacked in a certain process and if you tried to cook the cone “upside down” it may separate slightly and give the cone “wings” during that cooking process. Also we shape our cone to a clean looking straight shape, where others just stack and pile on their marinated meat product. I hope I’ve answered your questions!

Grecian Delight Thank you for your reply. After looking at your products and discussing with my GD distributor, I actually decided to use your pre-cooked shawarma pieces that come in pouches. I know that thawing raw meats is not suggested by GD and going direct from frozen to cooking is preferred but I'm hoping thawing these pre-cooked pieces will be okay (overnight in the fridge)...please let me know your thoughts. raghu devgan - To elaborate, It’s a one time cook. At the end of the day, if you have leftovers, take it off the cone and cook the remaining meat fully on a grill. Then cool, seal and store in a refrigerator.

The genuine recipe is : Clean your hands, Put your gloves, scrap your balls (only men allowed) and snif your armpits... I'm joking...that's a very good cooking recipe...;-). Cheers from France. i follow exactly the same way since 7 years (without scraping and sniffing...:-)). Moreover, he's right...shawarma meat can't be refrigerated.... It's becoming dry and smelly... Thanks for your accuracy and honesty...:-).

1st of all, That's meat and it's an ingredient of Shawarma, so please stop calling it shawarma, 2nd of all Shawarma recipe is: pita bread, chicken, french fries, ketchup, mayo and jãlapeno, nothing less nothing more not even lettuce, so stop misleading white man!

Wrong. The actual shawarma is the meat. But I don’t like what he’s doing with the shawarma either. And the fact that it comes frozen
