In case you didn't find out, you can damage the "Winter Lanterns" if you parry their grab attack, making them briefly vulnerable to your attacks. You get a Talisman for killing one. It's hinted at in the Diary page you got at 1:19:49.

As far as taking Torrent away, in addition to stopping you from running away from the Lantern enemies, I think it's also supposed to sort of add a sense of dread. Running around on Torrent is never as intimidating as running around on foot in a hostile area. Same reason why you can't use him in dungeons really. But I do agree that there's kind of too much free space down there in the woods. I think they should have forced people on to the paths so that you HAVE to encounter the Lanterns, which are the whole point of the area really.
