What do you think the connection to gluten is? What does it ‘acting up’ consist of in your case, if I may ask? Curious for my own circumstances.
This is a must try.
One of my favourite cake recipes calls for green, unripe bananas. I've made it with bananas of every ''stage of ripening'' and yes, the green ones are better. So I completely agree.

Can eggs be replaced with Flex eggs or something like egg replacer from Bobs RM?

Could you replace the white sugar with coconut sugar?
I don't have any coconut oil, can I use canola oil instead?
