    I was wondering if you’ve looked into Speidel Fermenters? I use 5 gallon buckets for farmers markets and they do okay, but I wanted something air tight and the bucket lids aren’t air tight. My ferments are held under brine by a plate with a bag filled with brine and that has worked good.

    Hey John what size are the black shrink wraps for the bottles ? Where do you get them? One more thing if you get bottles from Berlin. They don’t have plastic diffuser s do you buy somewhere else or don’t use them ?

    Quick question about seeds. I have a fermentation going on. Only 48hrs in using air lock lids with the vent system. I never had any cabbage so I don't have that in there to keep on the seeds at bay and under the brine. I managed to keep most of the seeds submerged, but a few have made their way to the top surface. I will only be fermenting for 2 weeks. Do I need to worry about the few floating seeds? And how bad is it to open the jars during fermentation to remove the floating seeds? Thanks!

    How do you figure out how much xanthan gum to use per however much of blended sauce?

    I asked that sometime ago and I believe I saw the answer as 2tsp per gallon. I made three different quart size kinds and used 1/2tsp worked good on the first two but the last one ended up to thick.

    about 2 tsp a gallon does work. Make sure you test out different amounts to get the consistency that you want.
