Seasoning My Oklahoma Joe's Highland Offset Smoker!

This is the process I used to smoke my Oklahoma Joe Highland. Hope you enjoy the video.

    *I have this same smoker fresh from my local Lowes home improvement. $379.00 but the metal is thinner on this one than my last one.the last one i had was a New Bransfeld that was smaller but made better, i was given it by an old neighbor and kept it going for 12 years, turns out they had it for 8 or so years before i got it. something you might try is smoking with Jack Daniels whiskey in the pan for whatever you smoke in the thing I cook my Thanksgiving turkey in hickory wood with about 1/4" of jack daniels in the bottom of the pan , i inject the turkey with Tony Chachrers Cajun butter AND i put butter in the turkey between the skin and the meat then hit it with Cajun seasoning all over the top. I also as it's smoking every 45 minutes to an hour come out and inject the cajun butter and Jack mixture into the meat then cover it up and let it smoke some more and i NEVER have any leftovers. by the time Thanksgiving dinner is done the birds bones are picked clean. Same effect at Christmas, Christmas time i smoke one or two hams depending on the size i am able to get and i put 1/4" of Jack Daniels in the bottom of the pan on it also and cover the ham in real butter, then i inject the ham with the butter and Jack mixture and about an hour before it's done i mix up 2 cups of sugar1/2 cup of cinnamon, and 3 cups of water and bring it to a boil on the stove and then take it out and liberally coat the ham until it's completely covered. i let it stay in the smoker until the last of the hickory wood burns out and then bring it in and slice it up and there's never anything left of it either. we usually have extra of the other fixins but never any of the meat, no matter how much i make it's ALWAYS gone at the end of the meal*

    When my paint started bubbling instead of painting it back I just seasoned the 🔥 box on the outside, it's just gonna keep bubbling if you repaint it, I haven't had any problems with rust, just spray a little oil on every other use , nice video

    Im on the chargriller right now. It's been running strong for a good 5 years, but it's about done. This is the smoker I've been eyeballing for a bit. I think I'll be upgrading real soon

    That paint bubble is from painting the fire box without adequate prep work. Some slight oil or other contaminant was on the steel when it was painted and the fire agitated it. This is my professional opinion. Another theory is that spot was not fully cured when the heat hit it. In mine the first owner built a series of smaller fires and used lower temps in cycle on the firebox before the final fire to season the chambers. Again. These are just opinions. I could be wrong as anyone else.

    Just got this smoker and did the burn out and the paint fell straight off under the fire box .... I knew it was gonna happen .... all the videos on this smoker says u will lose the paint on this smoker ..... but looks don’t matter I’m waiting to see how it smokes ..... and up grade to get the total control mod kit and expansion racks ..... so excited to burn it out and smoke some meats

    Same thing happened with mine. Only on the underside of the firebox though. A little sandpaper and some high temp paint does wonders!

    I have 2 Oklahoma Joes for my BBQ competitions since im a pro postmaster. I love them and they have worked very well and they won me a lot of money on the bbq circuit

    I know im a few years late to the party, but honestly ive had one of these smokers for awhile as well as one of the old char-grillers and I put high temp engine paint on it that has a max temp of 2000f and it still blisters and cracks, the only thing ive ever seen that really works is to treat it like a cast iron skillet, sand all the paint off you want, start a fire in it get it hot then rub it or spray it down with canola or some other high temp oil and let it cook in the metal and do that as many times as you want.

    Um...I just wanna point out that you should never use something made for cars on something used to cook/prepare food because non-food grade products contain toxic chemicals

    How do i burn off the chemicals before i season it? what temp and for how long? will the paint start to peel off or is that not a big deal?

    Looks like a nice smoker/grill/bbq. Fit and finish is definitely better than the menards brand, a buddy of mine has that. I have a Weber 22.5" Smokey moutain. Looking forward to your new years eve burnt ends video. P.S. you can retire those pants to summer time use, no a.c. needed in winter. Lol

    I'm hoping to get a Weber kettle this spring to keep on the deck. I would also like to get a slow and sear for it as well but I have to convince the wife that it's a necessity. Lol I keep these jeans around for occasions just like this.

    How is the paint holding up? Is it too much a pain to keep fresh paint on there or can you just let it get good and rusty for a while and maintain once a year?

    How long do you burn for to season? I may have missed that part. Also I bought lavalock high temp gaskets to seal better. Should I season first and then put on the lavalock gasket or gasket then season? Thank you.

    For the outside, if you repaint it. Use automotive ceramic engine paint. Won't ever bubble again.

    Bought some High Temp RTV (Red - available at any auto parts store) and sealed the smokebox halves and where it attaches to the main grill... also bought custom exhaust manifold gasket (also at auto store) and custom-cut a seal for the smokebox inlet door.

    But are the fumes, chemicals from the rtv safe for grill , food, and ingestion ? A little smoke, heat leak better than poison. Be safe.

    Weber-Grill-N-Spray or Pam Let's Grill Cooking Spray, is easier to work with.

    Question for people about seasoning the grill. For the first fire, should I go ahead and put the canola oil on then, or should the first fire be without canola? I would presume that you need to oil the thing before the first fire. Thanks in advance for your answers. Mine arrives today and I plan to season the thing tomorrow.

    From what I see and other comments the very 1st burn is a dry burn to burn off chemicals from factory. 2nd burn apply oil.

    What country or state do you live in and how does the temperature affect the bbq smoker and your cooks Is it hard to cook in different temperatures

    I think we all expect this level of smoker to have paint issues on the fire box. Smokers don't usually need to be running at 400, so I wonder if it was just too hot too fast and didn't let the paint properly bake on. I have a chargriller that took several years before the firebox showed any paint issues. Just picked up this model on clearance for $139 to try out, I'm a little worried about seasoning it and if the paint will be that bad on mine.

    I seasoned mine yesterday. Kept it pretty low, 225-250, for the first few hours. There was a 40 degree difference from one end to the other, so that will require a hotter fire box to get the exhaust side to cooking temps until I figure that out. I only had one paint bubble issue, about a 1/4 inch circle. But it appears that it was due to them painting over a small drip of grease or glue because the was a gel-like substance under the paint when I scraped off the paint bubble.

    Slow and low. Cool off. Apply oil again. Raise temp up a bit higher.

    Yea they all will peal. Especially where it get the hottest. Do what i do. Keep u some high temp black paint & keep it cover when not in use. I keep mine in the garage. it never gets wet. ijs

    also if your coals or wood is right up aganst the sides of the fire box, the paint will peal in that area. So I angle my two grates in a V shape with a catch pan underneath. It only peals a little in front now.

    The leaks are on both sides of the door of the main cooking chamber towards the bottom corners

    I just bought one myself but for it to smoke the right way your gonna have to get modifications. But the grill works just as good as the more expensive ones!

    Don’t use anything with chemicals to seal it. It will seal itself after a few smokes.

    the600cc my first offset smoker i never season it either. Had it 18yrs work just fine. Purchase my okla Joe's ab two months and for the first 3 0r 4 cooks i didn't season it either. But then decided what the heck. So i spray some pam around in mine. it does make it nice. But i still say its not going to mess up anything if u don't.

    Alot of ppl burn off the oils the factory packages these with before seasoning. When I was putting mine together pretty much all the cardboard inside the box was stained with this mystery oil they use. Just a good idea to get rid of that before mixing it with your seasoning oil.

    I just bought this smoker but did not do this seasoning, I guess I missed the memo. I coated the inside of mine right out the box with high heat 900degree BBQ Paint. Because I was reading that they were rusting really fast. I’ve had two fires now and no paint peeling outside and looks like the inside paint is baked on nice. Well see how this holds up.

    You should NEVER paint the inside of the smoker because as the paint heats it releases highly toxic chemicals. It would be a good idea to sand it down to bare metal inside and then season it properly.
