when the package came in the mail today I was like oh my goodness here it is!! Great recipe. I do some variations of this mushroom dish. Adding some pancetta at the start, remove them from the pan and bake the mushrooms and sausage in the same pan, then add the pancetta at the end. Also once the wine and liquid is cooked in, add a good spoon of mascarpone, makes this super creamy. I also use the same ingredients for a risotto, bake the mushrooms and sausage separately, use the mushroom stock for your risotto and add the mushroom, sausage, parsley, parmesan, and butter when your risotto is a la dente. One last thing, try replacing the rosemary with tarragon, also great with chicken and mushrooms ;)
