It comes from the Bible. Isaiah's vision of heaven, when the angels sing "holy holy holy lord God of hosts! Heaven and earth are full of your glory. Hosanna in the highest!" It's straight from heaven :)

Latin is the official language of the Church. It is an incredibly beautoful part of Sacred Tradition and it is the language used by almost every saint for 1800 years to pray and sing. For over 1000 years we Catholics have sung this melody of Mass XVIII, with it's text. Plus, Vatican II exhorts us to maintain and celebrate the use of this language. From Sacrosanctum Concilium: "The use of the Latin language is to be preserved in the Latin rites." (SC, 10) "Steps should be taken so that the faithful may also be able to say or to sing together in Latin those parts of the Ordinary of the Mass which pertain to them." (SC, 54)

1. Latin is the official language of the Latin Church 2. Latin imo is the most beautiful language that ever graced the face of the earth. 3. At bare minimum the Holy holy holy and lamb of God should be sung in Latin or alternate between Latin and English between advent/Lent and ordinary time. They aren’t hard to learn.
