1 TBSP WATER
3 TBSP SPRING ONION
3 TBSP FRESH CORIANDER
3 TBSP OIL
SAMOSA DOUGH
350G ALL PURPOSE FLOUR
185G WATER
1 TSP SALT
1/4 TSP SUGAR
3 TBSP OIL
SEALING PASTE
FLOUR
WATER
FOR THE CIRCLE
12 TBSP SUNFLOWER OIL
9 TBSP FLOUR
-HEAT 3 TBSP OF OIL ON MEDIUM UNTIL HOT , ADD THE BEEF, ALLOW THE GROUND BEEF TO RELEASE ITS JUICE FOR 6 MINUTES, ONCE THE JUICE DRIES UP ADD THE ONION, GARLIC POWDER, BLACK PEPPER, CHILI FLAKES, TURMERIC, CUMIN, PAPRIKA AND THEN MIX WELL, ADD SUGAR, SPRING ONION, SALT, CHICKEN STOCK POWDER, STIR AND FRY FOR 3 MINUTES, ADD WATER AND SOY SAUCE COOK FOR 3 MINUTES, ITS READY TURN OFF THE HEAT AND ADD CORIANDER, MIX WELL AND KEEP ASIDE.
-ADD SALT AND SUGAR TO 350G OF FLOUR, BLEND WELL, ADD WATER, OIL, MIX WITH A SPATULA FOR A FEW SECONDS AND THEN TRANSFER ONTO A WORK BOARD KNEAD BY HANDS UNTIL COMBINED, MAKE A SMALL BALL AND PUT IN A BOWL COVER AND LET IT REST FOR 20 MINUTES, SPRINKLE A BIT OF FLOUR ONTO A WORK BOARD PLACE THE DOUGH ON THE BOARD, DIVIDE THE DOUGH INTO 9 EQUAL PIECES, ROLL OUT 3 PIECES INTO CIRCLES OF THE SAME SIZE 12CM WIDE, ONE AT A TIME, KEEP THE REST COVERED WITH A KITCHEN TOWEL, AFTER ROLLING THEM INTO THE SAME SIZE, PUT 2TBSP OF OIL AND THEN SPRINKLE 1 1/2 TBSP FLOUR ON TOP OF THE FIRST CIRCLE, AND THEN PLACE THE SECOND CIRCLE ON TOP OF THE FIRST CIRCLE AND THEN ADD 2 TBSP OIL AND THEN SPRINKLE 1 1/2 TBSP FLOUR, PLACE THE THIRD ONE, LEAVE THE TOP OF THE THIRD ONE PLAIN,( THE LAYERING WITH OIL AND FLOUR HELPS TO KEEP THE SHEETS SEPARATE WHEN COOKING) ROLL THEM OUT AND THEN TURN ONTO THE OTHER SIDE ROLL IT INTO A CIRCLE 27CM WIDE , HEAT A 30CM PAN ON MEDIUM TO LOW HEAT UNTIL HOT, RUB A BIT OF OIL IN THE PAN PUT THE ROLLED OUT DOUGH IN THE PAN COOK FOR 30 SECONDS ON ONE SIDE AND THEN TURN ONTO THE OTHER SIDE COOK FOR 30 SECONDS, REMOVE FROM PAN, SEPARATE THE CIRCLES, PUT ON A PLATE COVER WITH A KITCHEN TOWEL, REPEAT THE SAME PROCESS TO THE REMAINING 2 SETS, AFTER THAT ASSEMBLE ALL THE CIRCLES ON THE BOARD PLACE A 24CM LID ON TOP, CUT OUT THE ROUGH EDGES, THEREAFTER CUT INTO 4 PARTS YOU WILL END UP WITH 36 PIECES.
-ADD WATER TO THE FLOUR MAKE A SLIGHTLY THICK PASTE, TAKE ONE PIECE FOLD IT HALFWAY THE LONG SIDE, APPLY A LIGHT LAYER OF THE PASTE, FOLD OVER THE OTHER HALF, SEAL IT NICELY TO MAKE A POCKET, ADD 1 TBSP AND A HALF OF MINCE TO THE POCKET, FOLD THE SHORT SIDE OVER THE MINCE LIGHTLY SPREAD THE PASTE ON THE TOP FREE EDGE FOLD IT AND SEAL PROPERLY PUT ON A TRAY, REPEAT THE SAME PROCESS TO THE REMAINING PIECES TO MAKE SAMOSAS.
-IN A BIG PAN PUT OIL ENOUGH TO DEEP FRY, HEAT ON MEDIUM , FRY THE SAMOSAS UNTIL GOLDEN BROWN, REMOVE FROM THE PAN, PUT ON A TRAY LINED WITH PAPER TOWEL, SERVE WITH SWEET CHILI.
