Sambar is a very popular south Indian recipe. The taste of sambar differs from state to state, city to city.
Dosa sambar, idli sambar, medu wada sambar, sambar rice, this is the perfect accompaniment to all these dishes!
This is a restaurant style sambar recipe that you can easily make at home.

Recipe :
Sambar
Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 4
Ingredients:
1 cup Arhar/ Toor Dal
2 tbsp Oil
1 tsp Mustard Seeds
10-12 Curry Leaves
3 Dry Red Chilies
1/8 tsp Asafetida
1/2 cup chopped Onions
Diced Vegetables- Brinjal, Gourd
1 + 1/2 tsp Turmeric Powder
1/2 tsp Red Chili Powder
2 tbsp Sambhar Powder
1 cup Water
1/4 cup Tamarind Pulp
Salt to taste
Method:
Soak dal for 20 minutes.
Boil the toor dal with salt, turmeric and 3 cups water.
Pressure cook the toor dal with salt, turmeric and 4 cups water for 7-8 minutes or until just cooked.
Heat the oil in a pan. Add the asafetida, mustard seeds, fenugreek seeds and red chili and sauté till the mustard seeds crackle.
Add the curry leaves and sauté for 20 seconds.
Add the chopped onions and sauté over medium heat till the onions turn a golden color.
Add the diced vegetables, salt and sauté well. Cook till the vegetables are half done.
Add the sambhar powder, water, cover and cook till the vegetables are almost cooked.
Now add the the dal, the tamarind pulp and cook till the raw smell of tamarind disappears.
Serve hot.

Ek tip meri bhi. Yadi sabji dal ho jaye jyada tab wo ban jati hai mix veg isliye sambhar aise ho jise khaya nahi piya ja sake or jismain beech beech main veg tukde bhi hon. Restaurant se mangai 90% sambhar ko ham faink dete hain kyonki wo bahut gadhi hoti hai or sambhar ke bajay sabji lagti hai. Isliye sambhar hamesha running honi chahiye.

Added ghee at last will enhance flavour. Also instead of oil one could make tadka with ghee in which case ghee at last not required...
