Recipe - serves 1 greedy bugger or 2 normal people
Prep: 15min
Total time: 20min
Ingredients:
• 1 large pork chop
• 1 cup cornflakes, crushed in your hands (GF Cornflakes work a treat)
• 1 egg (beaten)
• 2 cups of cooking oil
• Apple cider (or apple juice)
• White vinegar (apple cider vinegar if you’re feeling fancy)
• 1 red apple
• Red cabbage
• 1 long roll (about 30cm)
• Grainy mustard
• Mayo
• Salt and vinegar chips
Directions:
• Combine 1 cup diced red cabbage, ½ a diced red apple, 1 tbspn mustard, ¼ cup apple cider, 2 tbspn vinegar and some salt and pepper in a bowl and toss around. Then leave it off to the side.
• Get a frypan and add about 5-8mm of oil and start heating it on a medium high heat (target temperature is 180 deg).
• Bash out the pork chop to about half its original thickness, then generously salt and pepper and dunk in the beaten egg, then drop the coated pork in the crushed cornflakes and thoroughly coat it.
• Check the oil by poking a stick in it and if it bubbles, it’s hot enough. If it bubbles violently or is smoking, take it off and let it chill out. It should only be juuust bubbling off the stick (or 160-180 deg).
• If the oil is correct, drop the pork in and let the pork crisp up until lightly golden brown, flipping every 2 minutes to ensure it’s even.
• Generously coat the roll in mustard and mayo then add the pork, the salad mixture (without all the liquid in the bottom of the bowl) and serve with the salt and vinegar chips.

Use the egg shell to scoop out the little bit of shell. Way easier than chasing it around with anything else.

Salt and vinegar CHIPS are a way of life. No other chip compares to them. I put them in so many of my sandwiches. Or just on there own between a couple slices of buttered bread 🤤

‘CHIPS’ as a sandwich side are so underrated!
If you don't like camping with lettuce, use cos lettuce and keep it in a paper mushroom bag in the fridge. We revuvinated some before going away (Ie. it was already pretty old and we soaked it in water) took it on a 10 day trip and the remainder was still good at the end. Cos lettuce is so much more versatile because you can have it raw in salads and sandwiches and you can have it as a cooked veggie side dish (with a bit of chopped prawn).
Never thought of using chips on sliders, wraps or subs. Food for thought ✔️
Pork Sub, Chips, beer and a fire = Paradise
Nothing beats the balance of this meal and the chips to get all the taste buds going

Lovely spot. Great recipe. I’m married to a Dutchie and we have lots of mayo in our house. Every meal needs a sauce of some kind. Try S&V chips with various dips instead of biscuits. Awesome with avocado dip!! And it goes with beer! But that might be just me 😂
