Will, part of the reason the fillets on Lake Ontario Steelhead aren't bright pink is because of their diet. An ocean run Steelhead from the west coast eats a diet of mainly shrimp , which causes their meat to turn the pink hue. In Lake Ontario, the main forage is minnow based; Alewife, smelt and emerald shiners. Years ago, when Lake Ontario was first stocked with Steelhead, their average size was way better than it is today. Fish up to 20 lbs were fairly common. Today, with stocking and breeding occurring locally, the average size is way down. If you want a truly exceptional trout fishing experience, come further west to the Niagara River. It is absolutely amazing and 20-30 fish days are not unheard of. I have lived nearby the river and have fished it for 40 years. PM me if you want to come up.... and bring Keywest Waterman with you!

I know that their color also gets more pale the older they get and also after breeding but diet absolutely makes sense. Any way you cut it that fish was delicious. I’ll work on getting Aaron to travel a bit more with me this coming year

Beautiful place to fish! I’ve been there fly fishing and it was a blast. Couple tips if you go. 1. May want to leave the dog home. When the salmon spawn they die and sleeping next to a dog who has rolled in 20 dead fish is not pleasant. 2. Be cautious wading the current is strong and the rocks are slippery. 3. You’ll likely see several bear, which is pretty cool! If you want to fish actual Lake Erie hit me up Clams!!!

21:54 don’t worry about the color that’s a great fish, our brains are broken from the dyed stuff at stores. Also if you are worried about leaving some on the fish and enjoy learning try the butterfly method for fileting, tried it last night on a 14in rainbow and it was incredible.

Aloha Will. First of all, happy New Years. When I lived on Lanai, I started working at a remote fishing lodge in Alaska. I went up early every season to help get the lodge ready, get my fill of spot prawns and Dungeness crab, and most importantly, to catch a steelhead! Legal size 36”, all wild. Only kept one, but it was delicious. Good on you.

Love the video! You are cooking in my wheelhouse.....cook some king oyster and bok choy on the grill with a little seasoning and some hickory smoke! Did that several time this past summer, delicious! Bok choy in chicken noodle soup is amazing too! Great to see the old Weber hanging in there......set it up with a direct and indirect side....you will be surprised! Great video Will! This was awesome I’ve so wanted to go steelhead fishing in BC. But this is a lot closer to N.S. We’ve done a bunch of bok choy where we glazed it with a soy sauce mixed with Mizu. Ontario NY. Some good ice fishing in the Salmon River area as well. The other end of that lake is the Niagara River. Different type of fishing but just as exciting. Give it a try.

Part of the reason two is because when they’re pure hatchery fish, their skins and meat is sorry is lighter when they’re born wild their meat is a lot more orange. I’ve gotten fish a lot older than that and twice the size of that in the Meats been bright orange, so that’s not necessarily true.

We fished lake Ontario outside the mouth of the olcott River. Had a blast. Quick question that's a bit off subject. Whats the brand of hat your wearing with the fishing hook G logo? Man I have fished where you launched that boat in Altmar probably 100 times. We go every year for salmon steelies and browns. It’s about 40 miles north of Syracuse and about 4 1/2 hour drive from me. What was the name of the place you stayed at with the cabins I don’t think you mentioned it. We usually stay at a few places on route 13 depending on who’s booked. Tail water lodge has great food at the bar. And hopefully you checked out Fat Nancy’s. Great video man; fish on 👍🏼 Edit: that looked delicious my man 🤌🏼

I’m just seeing this video. I live in GA and have taken 50 plus guided float trips in MT, ID, and WY over the past 24 years. When you set off under that bridge, in that drift boat, I felt like I was riding in it. I prefer steelhead trout over salmon too. Better flavor and different texture. I’m going to research your guide and maybe go in the fall. Where would I need to fly in to?

So I tell everyone I take steelhead fishing for their first time that they will probably lose the first one they ever hook. It’s hard to describe that fight. For anyone interested in some shallow water videos I have a couple old crappy ones on my channel that I put up years ago when KZread was a way to share videos because I am not a content creator lol.

Yes and no, striped bass are riddled with pcbs and tile fish are through the roof with mercury. The water quality itself makes a very big difference

Why don’t you just clean it like you clean the salmon and then do the rib cage after you get the fillets out it’s 10 times easier instead of pulling the pin bones. You can do it just like you do a walleye cut each side strip it pull it out and there’s no bones whatsoever.

Tasted good to me, I get it… they spawn then rot but honestly this fish was fatty and delicious. Would I keep another? No. But this time it worked out

@CookingWithClams Steelhead spawn multiple times, it's the salmon that spawn and rot. I've fished that river and lake for 30yrs and I love catching them but the lake and those rivers are polluted and the bait fish they eat just isn't the same. If you gave me $10 I would eat a small piece of coho if it was smoked in a honey BBQ glaze but those fish not only taste horrible they are really bad for your health.
