    I enjoy your classes. I never attended college and now I have a professor teaching me. Can’t it get any better?! I am 58 years old, worked most of my life in food and hospitality and I am never too old to learn new things. We recently took a road trip in our truck and I made the oatmeal you mentioned to take. Made and froze breakfast sandwiches and warmed them up in a food warmer while my husband was driving. The whole week we mostly lived from prepped and preserved meals and just ate out when we wanted to. Planning right is everything.

    Pam, so many people don’t realize how great menu planning is. We started when we moved my husband’s parents into our home. We had 7 people ranging in age from 7 years old to 70 years old. We made sure everybody got a dinner choice each week. That cut way down on the complaining about people not liking what we had because they got their favorite at least once per week. It makes it much better at the grocery store because we had a list based on what we were cooking and did not waste a lot of food.

    Great class. Thanks. I’m one of 9 kids in my family and our Mom posted a month calendar on the bulletin board in the kitchen. She did it for herself so she could plan and shop but I liked looking at it.

    Job well done, that was a great class. You and Jim are awesome, knowledgeable and inspiring. I appreciate you both so much. I learned so much today. I am single and just recently lost my job of 23 years due to budget cuts. One thing I don't have to think or stress about is food, cleaning products, pet food and essential items because I have been stocking up and have everything I need for a good year.     Thanks, Pam and Jim! You're so supportive and upbeat. Love that! I added one column to my meal planning chart, since I'm starting from scratch and don't have anything prepared/frozen to draw on. I added a "Leftover Ideas" column for what to do, for example, with the rest of the roast chicken my husband and I won't finish in one meal. Ideas included quesadillas, enchiladas, chicken salad, and of course broth. Writing them down will help me remember what I have on hand, rather than letting it go to waste. Thank you for the inspiration!!!

    We had 7 children we had a 2 week menu with exceptions for birthdays and Holidays that we rotated thru with seasonal adjustments.

    When I was a mother of five, we had an extremely limited budget. I went to the store once a week, with $35 in my pocket. I knew exactly, to the penny, what I had in my cart. My meal planning took place in the produce (and occasionally meat) section. I bought what was on sale, considered what meals I could make with that, leftovers, and what I had in the pantry, and picked up anything else I needed to make that work. It gave me lots of practice learning or inventing new recipes on the fly, and worked really well for a family of seven with a limited budget. We also ate lots of beans at lentils and spilt peas, but we all liked that a lot, so no one minded.

    Fun. This is exactly how I plan meals for my household. I do pick Sundays to meal prep and I always double recipes and freeze the leftovers for another meal if we liked it. Such a smart way to go. I am a teacher (year 25) and the whiteboard is a throwback for sure, but I love learning and appreciate all the work that you two put into making these videos. I have been working through my canned meats (salmon, chicken, and pork) so far this fall and may need to do another big bulk run to Costco because that chicken is such a good deal! BTW, corn is NOT a vegetable. Botanists call it a starchy fruit. Most people call it a grain. I WISH it was a vegetable. LOL. Leafy green vegetables are the hardest food category to get in to the meal plan for me since they usually taste best when they’re fresh and raw or lightly cooked rather than cooked and preserved in advance. I can only eat so much canned spinach, you know?

But for now at 76 I’m going to watch every video and plan around them as I travel the USA. It’s just me and my German Shepard. I feed him real food that I want to can in my new InstaPot Max.     This was a great tutorial. I most appreciate the nutritional plate diagram. Over the years, I've become very meat/starch based. I need to keep that plate in mind to fight that. I only have a standard freezer on top of my fridge, typically used for meat. But I keep dehydrated veg on hand: onion (sliced and diced), celery, garlic, mushrooms, kale, carrots, potatoes, corn, broccoli, packed in jars, ready to go for soups and stews. I try to keep fresh veg on hand in the form of fermented and pickled products that keep well on the shelf in my fridge. Fermented broccoli stems with garlic, and bread and butter style cauliflower, radishes and carrots. From time to time, I grow sprouts. I guess where I mostly run short is fruit. Does wine count as a fruit?

    Thank you Pam. I am a single man in his 30s and I struggle with all aspects of menu planning - to the point that I've had to resort to meal prep services to enjoy a balanced diet (and don't just run on black coffee and hershey bars)... This is really valuable information for me.

    I'm 64 yrs old and sporadically planned meals. As our income grew, my menu planning faltered, and wastage increased, I'm ashamed to admit. No calculator at the grocers, no plan. Thank you for reviving my frugal side! On our retirement income, i find this will serve us well. Thank you so very much.

    Weight Watchers taught me so many things about menu planning. Though I haven't attended in many years and the program changed annually during my tenure, they didn't categorize Grains but Breads which included not only grains (like your corn) but also high-carb vegetables, like potatoes, beans, and winter squash. Starchy vegetables were NOT counted as no-point/unlimited vegetables. I can't help but think that way to this day.

    I could listen to Pam all day too! You know, this IS a "basic" Meal Prep class but so many things I have not thought about and breaking things down into smaller steps makes it not so overwhelming. The biggest gem I got from this was freezing leftover broth!!!! What the heck?!? I'll open a quart, use a cup or two and think "I'll need to use that in the next few days" only to find it in my fridge a month or two later and watch it go down the drain! Ridiculous! Just use what I need and get the rest in the freezer! Duh!!!!!!!!!

    I meal plan on Wednesday or Thursday based on sale flyers. I LOVE what you are doing and hope you include some more on building food storage for food security. That is my focus. I have been watching you videos and am working on taking it one small step at a time

    Thank you for this class, it may help me rethink my methods. So far, when I had a meal plan written out, it was always changed by my mom's food wants that day. So The reasons I haven't made any kind of meal plan in the last few years is simply because I cook for my mom, (as mom's companion and step and fetch it. it's a good life. I love my mom.) Mom's food ideas change along with her health and then her tastes, (Bless her, she's almost 90!) I do have a list of food groups though. A bunch of ideas for meals, and the flavors I ask her if she wants Mexican or Italian or regular American, hamburger or casserole or stuffed peppers, etc. , and then if it's Mexican, is it enchilada's which are extremely easy to make in the microwave as she likes cheese enchiladas and salad, or Taco's or Burritos, and etc. Tamales take more time. But Hormel has some canned ones in a pinch. I can list the style of foods, Italian, American, Mexican, Chinese, Mediterranean and then list a few dishes below that, that helps me run down the list of possible foods for MOM to enjoy, and we have a good pantry of spices and flavorings so that's all it takes for a good meal. a main weekend meal would be a roast chicken or a pot roast and then the left overs turned into taco's or spaghetti or a casserole.

    My mom was a single mom. It was during a time when very few families were “ broken”. My mom went from being a full time mom to a working mom. Because she had parents and grandparents that grew up in the depression, she knew how to stretch a meal. She would buy whole chickens ( always on sale) and she taught us how to make 3 meals from it. She baked bread (days off we’re spent in the kitchen), we made homemade Mac n cheese, we ate liver and beets ( yuk), we never snacked, we never went out to dinner. I am now a 65 year old wife of 45 years, mom of 4 and grandma of 13 and my mom just died from dementia. I will always appreciate what she taught me, I continue to do all the things that I learned from my mom. BTW, she always did a monthly meal plan.

    Thank you, Pam. This was timely for me as I have been planning to work out a meal planning schedule. I have about zero hope of being as organized as you are, but I decided a while back that the most stressful part of preparing meals is the planning. I think I am going to do something more like a 28 day meal plan so that by the end of 28 days I can just repeat myself and nobody will remember what they ate 28 days ago. In fact I think I'll do two of them so I can do two months before too much repetition. Now that I've made that commitment in writing maybe I can kick myself in the pants and actually get it done.

    Rose, you are a treasure! Every cook, whether man or woman, can learn so much from you. Plus you present it with understanding that not everyone likes the same foods, or the same way of doing things. I done a lot of those things over the last few years.     So, my mom was raised in 60s 70s and is so wistful. I had to learn all your stuff now. I have bee doing all this and they all think I'm crazy. But they all want eat and sabbatoge my ingredients which ruins my meals. Guess I need a lock on freezer and fridge.

    Thank you. The class pointed out to me where I actually do some of the steps, but not others, and where I need to do a lot more bulk cooking of meals so that I have meals prepared. I also do parts of the preservation, but not others, i.e., I freeze meat after shopping, but not in a form that is ready to use. Now I know where I need to improve and how it will help me eliminate the waste of produce that I sometimes experience.

    THANK you so much for this class! We have been discussing getting a 3 month pantry together and this is the answer. This was the last step that I needed to do. But, what I REALLY like, is the idea of taking a day or 2 and writing down SUPPERS. I get so stinkin tired of day after day after day trying to decide what I'm going to cook. Every day I stand, staring at the ingredients and then deciding. We love sloppy joes, and It's been a very long times since I made them. I always forget about it. Making that list, eventually becomes your kitchen menu, which is a bonus.

    I ran a four day test of my emergency preps about 20 years ago. Had variety, taste, attractive plating. I was starving at the end of the test. I pulled out my cans from the trash and discovered I had planned lovely meals that had only 900 calories each day. So plan, then test your plan.

    The My Plate diagram reminds me of the Oslo meal. It was created during in the 1940s. The children were malnourished and couldn't concentrate on their schoolwork. It consisted of 2 slices of wholemeal bread with butter, 1 ounce of cheese, lettuce salad, 1 cup of whole milk and either an apple or an orange. The children made huge improvements. Just a fun fact about nutrition.

    I loved this video. I do a lot of menu planning and always have, but you have given me so many great ideas and refreshed my mind! I would like to share with you something that I also do. I cook a big pot of pasta, drain it, and rinse it in cold water. Then I place 2 cups of pasta in ziplock bags and freeze it. It is so nice to have on hand when I need some. I also do the same with rice. I am anxiously awaiting the video on how you have organized your freezer with your bins. Thanks for all you do..

    As always, I learned some things I didn't know before watching this video. This makes menu planning seem doable. Thank you! You are such a good teacher, and I enjoy the banter between you and Jim so much. I will be passing along this information to my daughter. She is in the early years of her marriage, and I believe this will be extremely beneficial to her especially once they start their family. I do think about what I have on hand, but the only time that I have ever done this was when I was planning a get together for a holiday. I don't know why I never thought about doing it daily/weekly/monthly. It would have saved me so much money, time, and stress. Thank you, again. I was so excited to see that you had a new class up for us. I look so forward to all of your videos, but especially the classes.

    Great class about menu planning. In my household, I cook 2 or 3 times per week. To make is easy for myself, I freeze dry onions, celery, mushrooms, and vegetables. I also can chicken, beef broth, and pasta sauce. I can put together a soup, casserole, or other simple meal very easily. Being prepared is the key, as you outlined in your video.

    You two crack me up. I love it when Jim acts up and you guys start giggling. It’s my favorite 🌺 I’ve always meal planned. Working full time with 3 sons at home, I had too. Even though we’re both now retired, I still do. 2 or 3 meals lasts us a whole week. We’ve always eaten leftovers. Sometimes I turn them into something else but mostly, we eat them as is.

    I would ❤ to see how you prepare a typical weekly meal plan-not for camping. Do you have a list in your kitchen or do you go out to the garage and check the lists on the freezer doors to find things to pull out? I have been doing pretty well prepping and freezing meals since the first time I watched this video, but I haven’t been pulling them out and using them so things are starting to back up in the freezer.

    I prefer to meal plan around seasons and holidays. I sometimes get overwhelmed but it’s best for us. I started and stop at least a dozen times. Sometimes good, sometimes not so good. Thanks Pam, for the encouragement.

    I just helped my son do a meal plan for 5 days. It looked almost exactly like yours. We did the meals wanted, then did the grocery list next to the meal area. We just used notebook paper..lol. but, he wanted to get a handle on his food spending. And this is the best way, I think. Great video

    I had a friend who did once a month cooking. It wore me out just watching her plan shop and cook. She in fact spent an ENTIRE DAY pre cooking and freezing etc. I could never do it

    Pam I love your intro, it's great. When I finally got to watch this video I was in the process of making meatballs to freeze for future use. My recipe makes 48 so it covers a lot of meals and I vacuum seal them for the freezer since it makes quite a few meals ahead for just the 2 of us. When you were going through this great video I remembered that when all my kids were home years ago I would make a weekly menu and stick it up on the side of the refrigerator and that way I knew what I was going to have and I could move it around as maybe my schedule changed for the week and something on way day might have worked better on another. Thanks for your hard work and looking forward to the next class.

    I use the Paprika app. You can use the free app of this, but I did pay for the app and have the extra features. One tip though, I email my shopping list to myself before I enter the store. If I accidentally touch the screen with my grocery list, I may accidentally tap an items which is then removed from the list. LOL. I live by this app. Meal plan, shopping list and recipes all in one. I love your videos. You have helped me with so many different things, canning being one of them.

    I incorporated your oatmeal cups into my meal planning and they are wonderful. I am having knee surgery next week and they will be so easy for my husband to add boiling water too for my breakfast. He does not eat oatmeal like I do so they are perfect for me.     This may sound crazy, but I took a baby step and have been trying to organize lunches for work by preplanning pieces of lunch. I keep on hand in the office some uncle ben's long grain cooked rice (it's already cooked in pouches, all you have to do is heat it up) and some ramen noodles (I don't usually use the seasoning packets - it's basically instant noodles). I find a protein on sale - let's say ground beef, but it can be almost anything, I cook it up at home, add whatever I like to it. I keep some plain, some have onions, some are taco seasoned, some have a lot of veggies, basically whatever I'm hungry for or have available. I let it cool, divide it into little baggies by serving, usually about 1/3 to 1/2 cup (generous). put the little bags in a large bag, take them to work and put them in the freezer. Do the same with frozen veggies. Do the same with shredded or grated cheese. I usually keep butter in the fridge and seasonings in a drawer. Then lunch is noodles or rice, meat of my choice, veggies if I want some, cheese if I want some, add some butter and/or seasonings. It's a generous lunch or I can divide it in half and have the leftovers tomorrow. If I plan ahead I take in lettuce, and just thaw and put the meat, cheese, and veggies on the lettuce with dressing. I can make almost an infinite variety of lunches. I don't get bored with it and my co-workers think I'm crazy. At the moment I've got 2 kinds of ground beef, beef strips, rotisserie chicken, bbq chicken, pork cutlets, some shrimp, and some seasoned krab meat. Veg are mixed chinese, mixed veg, and corn. I've got shredded cheddar and some Romano cheese. It's working out so well that my hubby has started doing it as well, and we're setting up an 'easy meal when we don't want to cook' space in our freezer at home.

    Great class! One of the best things about meal planning, "the nutrition of variety" is obvious, once it's written down. I.e., Chicken, fish, beef, meatless, turkey, fish, pork. or white potatoes, sweet potatoes, rice, noodles. Shopping when things are on sale..also helps. Look at those store ads!

    It's been a long time since i meal planned, thank you so much for reminding me i need to do it! I used to meal plan each week because that's all the room we had on our semi truck for food was about a weeks worth. I taught my son how to cook, meal plan and many other things along with his core subjects while team driving with my hubby. I miss those days, I've been grounded from the truck for several years now due to health problems but i still have the wonderful memories.

    This class came at the perfect time! I have been watching videos on meal prepping/freezer meals ( same thing, just depends on how you preserve them. But a lot of them are a bit ovetwhelming. When I was working (retired nurse), I worked 7p-7a 3- 4 nights a week with every other F-S-S off. Usually on one of those days, I would do some "batch cooking" so I wouldn't have to worry about cooking before going to work. I learned that you can't alwsys depend on getting a supper break at work. So I would make lasagna, chicken spaghetti, beef stew, and baked chicken ( choices would vary. But these made a lot of meals). Then, I would divide them into individual portions, flash freeze and vacuum seal. The next time, I might vary the entrees, but there was always something to thaw and heat. I just added a side. On days off during the week, if I felt like cooking, I would make something different (pork chops mashed potatoes and green beans) and have leftovets the next day. Since retiring, I'm still in the same rut. My biggest meal is lunch and I usually "graze" at night. I'm still a night owl so I have to watch what and how much I eat during the night LOL This class was really helpful and explained meal planning much better than some who just show what they have planned ... and nearly all have a Leftovers night. Or YOYO-- you're on your own. Thanks, Pam and Jim for all that you do to help us prepare.

    Thanks for letting us know about your experiences for meal prep and food preservation. I know what nurses go through: I was married to a nurse for 13 1/2 years, worked on a hospital nursing psych unit for almost 3 1/2 years, and taught classes of nursing students at nursing schools and community colleges for my first 10 1/2 years of my teaching career. As far as I am concerned, nurses know more than the docs do, know the individual patients than the docs do, and should be paid as well as docs. It is nurses that keep the patients alive on the units.     I grew up in a family of 5 kids. My dad really liked mashed white potatoes for dinner. We had them frequently. To this very day, and i am 64 years old, most times potatoes are a no go for food for me. I do make them for my family sparingly. My kids love them, as does my husband. Funny thing that childhood thing can be so important. Thank you for your knowledge and passing it on to us. We are the lucky ones!

    I do meal planning for lunch and dinner a week or two at a time using small post it notes on a laminated sheet of cardstock. I like the post it system because I can easily move things around-especially when I have some unexpected leftovers that I need to try to use within four days or freeze. My husband won’t eat the same protein two days in a row, so dinners need to be balanced by protein type, but leftovers are my first choice for lunches. I also keep a list of things I’d like to try or ideas for meals with my meal planning things. So when there aren’t leftovers, I can scan through my post it notes knowing I can make anything on them because I have all the ingredients. It’s easy to switch when I have more or less time than I anticipated. I also have some ace in the whole things for lunches like brunch for lunch, hot dogs, cold sandwiches, baked sandwiches, and grilled sandwiches. One of my favorite things to keep on hand is precooked bacon. I bake a pound at a time, serve it for a weekend breakfast and freeze the rest to be used over the next few weeks for quiche or brunch for lunch or on a sandwich. I am having so much fun learning about meal planning and how to simplify things. My husband and I are both retired and like to cook. Learning to freeze some instead of just keeping it around for leftovers (which then sometimes go bad) has been revolutionary for us. Most recipes are enough for 4-6 servings and is just too much for us at one time. Thanks for all you and Jim do to share your practical advice!

    EXCELLENT VIDEO - THANK YOU PAM AND JIM! While it is very true, if you're hungry, you'll eat what's available. However, what can and will happen.. is you'll find that "food apathy".. i.e. a lack interest in foods sets in.... besides developing likely some nutritional imbalances. Do Plan.. VARIETY IS DEFINITELY THE SPICE OF LIFE. .. Speaking of spice.. have a bunch of different spices that you like to change up the flavor of probably one of your biggest dry bulk stored item RICE!

    We also are flexible. We always plan at few nights that are from my pantry so that we can stay flexible. I try to always make sure we eat the “fresh” items like fish and fresh vegetables. When life happens we can skip the home canned jar of chicken and use the fresh fish. That cuts down on our waste.

    Great class! I need to meal plan like you have taught! One thing I like to do when going to the grocery is to build my grocery list with Alexa! I tell her what to put on the list and she does it. That way I do not have a piece of paper to lose!! ❤❤❤

    Never enjoyed college more than now😊 Nursing school failed miserably at incorporating nutrition, except special diets on occasion. You're wonderful, and the camera guy is pretty wonderful too😉
