He is beautiful!! When my rooster first started doing that I thought he was just loosing his balance and being clumsy lol
mine does this to me! He will drop one wing though and fan it out...I am surprised he thinks I am a hen! I am a pretty big hen LOL

The dance is called the Waltz and is used to show off in order to mate. If the hen crouches after he dnaces that means that the dance worked and she wants to mate.
This looks like display dancing. He's alternating between tidbitting and dancing. "Look what a good provider I am! And I am so pretty!"
You're probably right! Roosters pretty much only have one thing on their mind :)
