I think I get the idea: raw poly-distortion has a synthetic sound to it, since you don't get the intermodulation and resonance of multiple strings interacting in a sound field, or the natural increase in gain between chords and single notes. So adding a monaural distortion stage afterwards captures some of that original distortion flavor.
What does the color control do for poly-distortion?
Reduces the overall distortion. There seems to be some extra distortion added in addition to the hex distortion. According to the manual, it increases "clarity"

Does this work well wiyhout the GK? I plan on getting a GK pickup eventually, but I want to buy and use this pedal now.

I'd like to know as well. It's supposed to, but I'd love to see samples of the performance with just the regular pickup...

I mean a bit more detailed samples, at least for more than 3 seconds each mode :( Thanks for the demo anyway
Can it be modded to have midi-out?

Not really; the distortion sounds have nothing to do with MIDI conversion, and there are other standalone products for converting 13-pin signals to MIDI.
Strange that Wayne loves Poly Distortion But he doesn’t show this to its full instinct
You talk to much. We just want to hear if the damn thing makes any cool sounds.
