Rob Baan: "Shiso Leaves, fantastic with Sushi and Sashimi"

The very mild, but outspoken, taste with its strong fragrance makes it suitable to mix it into a salad. Take a small slice of fresh tuna, dip it in some Kikkoman soy sauce, wrap it into a Shiso Green Leaf and be amazed. A treat to your mouth. Try fresh tuna tartar mixed with fine shallots, some pepper and salt, a touch of soy sauce and some fresh chopped Shiso Green Leaves on top. In Asia it is popular as a Tempura. But as a variation we have fried a (well-dried with tissue paper) leaf in oil, and used it as decoration on a piece of meat. (dry it after frying on some paper and add some sea-salt. Shiso Leaves Green in Japan called ‘Oba’. There is no (raw) fish dish without one or more leafs. The main reason, next to its good taste, is the belief that the leaf is an intestine stimulant and protects against (mild) food poisoning. More info? www.koppertcress.com

    Didn't know the pink colour for Japanese pickled ginger comes from the red shiso leaf. Thanks @koppert cress and Rob Baan for sharing that.

    That statement is only half true about Red Shiso. Red Shiso is only used to color low grade (out of season) Gari because they used mature ginger. Young ginger will naturally turn pink when exposed to acetic acid on its own. However it is used to color other things such as plums or rice. Red Shiso powder is pretty common in furikake seasoning blends for that same reason. However no clue what hes talking about with green Shiso. Shiso is not in the nettle family, its in the lamiaceae family (mints, sage, basil etc), Nettles are in the Urticacea family. Either way it has no such "healing effect on your stomach", its just a colorful garnish with a unique taste.
