The best variety for this sauce are cortlands, but you can use any variety that turns mushy after cooking: macs, rhode island greening, gravenstein.

I’ve been roasting applesauce in the oven for years, I butter my pans, cover the apples loosely in a 325 oven, then uncover and add a little apple brandy. The caramelized leathery bits are wonderful. I just process them in my little food processor which does not make it totally smooth and put in clean jars. Wonderful with pork ( we raise Berkshire pigs) and turkey or just for dessert. I never thought about olive oil, interesting idea. I like using Staymans or Yorks or Albemarle Pippins. I enjoy your videos.

I'll have to add this to my list of uses for apples. I always end up with way too many of them this time of year. and tnere are just so many pies I can make before I loose my mind.
