Notwithstanding the Knorr product placement, this is a really cool technique & demonstrates MPW’s wizardry in a kitchen. Parboiling the potatoes, rinsing & drying them out, preheating the roasting pan, using clarified butter to roast at higher heat, and pouring the butter first to get it hot so it can immediately start crisping & frying the potatoes. It’s like a reverse pommes fondant. Perfection is a lot of little things done well according to MPW, and this is a good example of that. Can’t wait to try.

Pretentiousness doesn't belong in cooking anyway. My grandmother cooked THE BEST foods and when I asked her how she did it, she always said, "I didn't do anything I just put it in the oven." I asked, "okay well what seasonings, grandma? You must have some special ingredient you're using." "Salt and pepper," she would always answer. Maybe one day I'll have that type of zen while cooking.
