    It has six racks but I think the most I'd try is three briskets at once because of how difficult it would be to manage all three, exchanging racks and how much heat they'd eat up. Two is very doable but I think rotating racks is the way to go with how this smoker cooks and how much rendering the top brisket would do, I would worry about bark formation on the bottom briskets.     Wise choice my friend. You won't be sorry. This bad boy puts a hurting on pork butt and makes a mean Brisket but to this day is still my favorite rib machine in the world. 🍖

    Gotta admit, I had the WSM on my list for a long time. My wife got me the DynaGlo Standard offset vertical as an anniversary gift and it made my best ribs yet. The smoke ring on em was incredible. Does take some love to the smoker before cooking, but worth it. 100% is a fuel guzzler, but Costco helps with that! 😆

    There is truth in that I believe. While the water pan is doing its job as a heat baffle, I am of the opinion that a lot of the quality smoke is being isolated to the side walls of the cooker, then up and out the dome lid.

    Its possible, but I used a water pan during my rib cook on the Dyna and the smoke got into the ribs no problem. I did some Turkey legs on it last week and they came out great as well. I dont have the wide body, but will try a smaller brisket before it gets too cold out.

    Great video!! I also have a DG but i been having problems trying to keep the temp up and steady, on your next video you should point out some of your tricks, maybe I can find out what I’m doing wrong

    Will do. I have a video in the process as we speak. Going to do another Brisket on the Dyna-Glo in the cold for a 8-9 hour cook. Will show how I like to refuel, stir and ration out the charcoal. Thank you so much for checking out the video! :)

    I had a WSM 18" for a while and it's a great smoker, no joke, BUT it's charcoal ring/chamber is a lot larger than the Dyna-Glo, is it not? It will hold more charcoal so it will burn longer without a refuel. Also the main reason I ditched the WSM in favour of a Dyna-Glo was that the set up and clean up of the WSM was an absolute PITA.

    I agree moving, disassembly and set up can be a pain but I love the long distance cooking it affords you. If I have a big pork butt that I want to go the whole day, the WSM is who I am calling into action. It has also become my go to bad weather smoker. If I only have a small dry area out of the rain or snow, then WSM is the go to with the minimal foot print it takes up. Chicken, Turkey and ribs in a jiffy, call Muchacho! 😆 Thanks so much for checking out the videos. 👊

    Yup done good looking ribs there....Just did a 9 lb butt in the Dyna Glo Widebody and a couple of 6 lb chickens....yeah, the Dyna Glo does a great job

    I'm finding.. the more you cook ribs it almost doesn't matter what you cook em on. Real wood will give a bit more smoke to those ribs though. Great video..!!

    Have you thought about unwrapping them at around 195-200, glazing them with a thin coat of sauce then put them back in uncovered to get that last 5 degrees in them or so?

    No lie, early yesterday there was a huge crash outside. I rushed out the door and found Muchacho face down in the yard, out for the count. I could blame the 30 mph winds that were roaring but I'm afraid the prime suspects at the moment are Chaz Michael Michaels and Dyna until we gather all the evidence. I'm giving Karen a pass since I won't believe a weber would ever turn on another weber.

    I love cooking spare ribs and trimming them down myself to a "St Louis" style cut, they are my favorite to eat. I enjoy baby back ribs as well but I find the spares are more forgiving on the cook and while they may not have as much meat as baby backs, they have the flavor and amount of fat I'm after.     When u add so much charcoals the temp its not going very high? After how much time after you add the fired charcoal over the cold ones you add the meat ?

    Thanks so much for checking out the vid! :) For this cook, I split a single chimney between the two of them to start each fire, then let both cookers get close to temp before I put the ribs on.

    I have been debating trying that.... I know it works well in the WSM 22.5's but I think an entire rack of baby backs might be a tight squeeze on the 18.5. That probably won't stop me. ;) Thanks for the idea very much! :)
