    When you cook only one rack of ribs, does the cook yime get altered? Does cooking with wood differ?

    Man I love your vids. You always keep it simple and real. Entertaining as well. I deviated from my normal method using someone elses advice and it was a horrible pork butt. Made me sad. I went complex instead of simple and paid the price for it.

    Bought a used Dyna Glo offset (the size smaller than the one in this video) a few weeks back and sort of winged it as far as the fire was concerned, but the ribs came out pretty good. I knew enough to know that blue smoke was better than white smoke, but didn't know how to control it. This was helpful b/c I can see right away how putting the wood in the corners helps, and obviously the chimney helps a ton there too. Looking forward to more advanced projects like the brisket. Thanks again.

    Man I tried this twice and the grease flare-ups are horrendous and ruin the low and slow. That's been my experience Yours did great

    That looks really good! I've been using the SNS Kettle for a few years and it's been great. The only problem is that I have several paying customers and I don't have a way to do more than one brisket at a time. This is be a pain, especially around Thanksgiving and Christmas, when the demand is higher. I've been thinking about buying something that would allow me to do more than one brisket at a time. The Grand Champ XD might be a good option. Sorry about your uncle, by the way.

    I just scored a WSM 22 inch of FB market brand new for $225. Def going to have to try this. I noticed you don't have any mods done to your WSM. I have read lots of forums and there are many. What's your opinion on the mods?

    That is an amazing deal on that 22" my friend. I'm not a big mods guy for the WSM yet.... I usually just go sans water pan for most of my smokes nowadays unless it's a longer smoke like brisket or pork butt. Cheers and happy smoking to you! 🔥
