Is there a way to adjust this so I can create irregular shapes for the sheet rather than square or rectangle?

Not directly. But you can. First you need to have a curtain panel door or windows loaded, then try to combine some of the panels by deleting the curtain grid, once you have the big panel the size of the door or window, change it into a door or a window.
