Good question! The purpose of drawing a PH chart is to understand thermodynamic properties of a refrigerant, and the process of how refrigerant changes its phase from liquid to gas and then back to liquid. The role of pressure becomes evident as you traverse a refrigeration process later on this diagram. Once you have drawn the PH diagram yourself on a piece of paper, your understanding of the vapor compression refrigeration is enhanced. These are some reasons why many find this approach useful.
