    Hello chef! I really liked your version of Gazpacho. Here in Spain, what we do is put the tomatoes, cucumber, green pepper, salt, olive oil and vinegar all in the blender until it is liquid. For example, I put it in bottles and we drink it in a glass as if it were a cold drink;but other people chop the pepper and cucumber mix it with the gazpacho and eat it as a soup.     @@a.s.6685 That's correct at least in our family. We make gazpacho the way Ana does: tomato, cucumber, sweet pepper, garlic and onion. All in the blender with water and olive oil (we like variation in our acid, so we add that tableside). If it's made with bread to thicken it's actually not gazpacho but porra. And there is also a simple tomato and garlic cold soup thickened with bread and that is salmorejo.

    @@melenatorr If you look up the origins of gazpacho, bread is actually the first and key ingredient, even before it ever contained tomatoes, which had not yet been introduced in Spain. In Andalusia most people still include bread in gazpacho, but I don't, and when there is no bread, there's no need to thin it out with water either.

    I am going to call these, Italian Gazpacho 1 and 2, Georgia Gazpacho (peaches), and Vichyssoise Ajo Blanco :) I am from Spain, so it'll be fun to try out all of these variations.

    I love how described the hot house grocery store tomatoes... You can always tell the difference in taste. When I was a child, we'd spend the summer on my GRANDPARENTS farm.. GRANDMA would send us out to pull weeds .... With a salt shaker in our pocket.. She said she didn't care how much we ate out of the garden, corn, tomatoes, cucumbers, carrots so long as we pulled weeds...

    Perfect timing! It's pretty hot where I live (Montreal) and cold soup is the perfect light lunch. I will try some (maybe all) of those for sure. Thank you for those Chef! 🥰 I only wish I knew what to do with the leftover fibres. Cause fibres are good for the body, it's a shame to toss them. I suppose I could add them to some pasta sauce?

    Has anyone tried adding some fresh peppermint to gazpacho verde? Peppermint is great for cooling down the body on a hot day, and I think it might go well with this soup flavor-wise.

    I don't use Cuccs or Cheese for green gazpacho. Tomatillos and gold currants/Sultanas, fresh Mexican oregano. Soup is reliably more filling and I pair it with blue 🌽 corn dumplings.

    sherry vinegar is the magic ingredient. put everything in the cuiz. skip the manual chopping. Good quality Italian canned tomatoes work if you can't fine good, ripe toms. The rest of the recipe is OK.

    I'm surprised and a little disappointed by the fact that you didn't include what I consider to be the greatest cold soup of all time (ahem, my personal preference): classic rich and creamy--and decadent-- vichysoisse. My fist taste of this delightful soup was in 1956 (yes, I'm very old and somewhat tradition-bound when it comes to food and very much so when it comes to provincial French cuisine). I've been making and delighting in vicysoisse for 66 years and will continue doing so until... It's that good.

    Oh, that sounds good! What, no sauté for the jalapeños or garlic? I think I'd prefer to have the garlic and Jalapeño blended (purée) along with the blender step, and I might not mind the tomato peel being blended thoroughly. Somehow, I had thought avocados were included in gazpacho. This recipe sounds very good. I'll have to get the recipe file and try it! Yay!

    Okay, I am opposed to pureed gazpacho. If I wanted to consume V-8, I would just pop open a can. I guess I don't understand pureed soups, cause I don't 'get' hot pureed soups either.

    Cilantro in gazpacho? Not very common at all! In spain we dont use cilantro. Maybe you mistake us for mexico... The rest of the recipe is very accurate! well only if u switch the balsamic for vinager, if posible vinagre de jerez.

    I'm sure your tomato gazpacho is very tasty, but it cannot be called classic. For the traditional gazpacho : no onion, no cumin, no oregano, no hot peppers, no Worcestershire sauce, only ripe tomatoes, cucumber, red and/or green bell pepper, garlic, salt, pepper, Jerez vinegar and Spanish (Andalusian) EV olive oil. No need to peel the tomatoes or to chop finely, as you blend all the vegetables and then strain them. No basil and definitely no coriander. Serve chilled, sprinkled with little dices of tomatoes and cucumber.
