Like in star fox zero, a mission where you play with peppy, you can actually hear everytime he does a barrell roll, he also says "barrell roll"

Alright. The Guacamelee 2 one was pretty clever and self aware. It pokes at the outrage from gamers and the developers' awareness of the existence and adds some more fuel to the flame.

I’m surprised you didn’t mention Giant Enemy Crab in Bravely Second. It’s got two moves, one called Massive Damage and the other is called No Weak Point. Referencing memes is a good way of dating your game, especially in the case of Guacamelee. Now if a game references a meme in its own series, like TES, then I think that shows a neat little connection between he devs and the community.

I'm amazed you didn't mention the Doge Meme in TriForce Heroes given it even made some American customers give back their copy to order a new (Meme-free) version from Great Britain... And that albeit the 3DS is region-locked. Thankfully unlike the fully funded book of the same name. Congratulations!

Also, there have been many references (B3, TTT, DBS) to the Yamcha vs Saibamen battle.

I feel like developers need to be careful when inserting memes into games - not only can it come across as overly pandering, it can break the immersion of the play and the realism of the world. And plus, since these references rarely age well, it can lead to many eyeroll moments.

SEGA's Phantasy Star Universe had a couple of NPCs spoutling lines such as: 'lulz', 'orly' or 'all your base are belong to us' and other memes from the early to mid 2000s. It was the first game to refer to internet culture that I played. For the record, the original version of the game in Japanese did the same, referring to popular Japanese internet quips.

Holy shit, "Habeeb it / TWINKIE HOUSE!" was one of the first internet memes and was always my favorite. NOBODY remembers that shit. Thank you for referencing it and taking me back to a nostalgic time.

In Kamen Rider Ex-Aid the line "Item Get" used by Ex-Aid/Emu Hojo when he gets an item he says it is similar to the phrase "Shine Get!" from Super Mario Sunshine.

I mean it would kind of be hard to make a game that references "relevant" memes considering memes die out in a matter of weeks and it can take months or even years to make a game

In Pokemon X and Y, there's a Psychic on Route 10 that, upon defeat, states that your Pokemon's power levels are "over 9,000 for sure!"

I still remember Pokémon Y had a reference to DBZ saying after I defeated a psychic. “You’re Pokémon’s level must be over 9,000!”

There is an achievement in F1 2018 called Improvise. Adapt. Overcome.

What about Team Fortress 2's Spycrab Cosmetic? It's a reference to a glitch that actually became a meme in the TF2 community.
