Reducing and Non Reducing Sugars
Reducing and Non-reducing Sugars
In this module, you will:
⚫ learn how to classify carbohydrates as reducing and non-reducing sugars.
• The carbohydrates that are oxidised by the oxidising agents like Fehling's
solution are reducing sugars.
• The carbohydrates that are not oxidised by the oxidising agents like Fehling's
solution are non-reducing sugars.
• A reducing sugar bears a free aldehyde group in its solution phase.

Nice explanation :) The only part that is missing, is how the reagents in the test actually react with those reducing sugar and what makes the color change.

Excellent explanation, however I think there is an error in the isomerizarion process that the open-chain structure of fructose undergoes. On the left side of the structure, the oxygen is as part of the chain, which it is not, since that oxygen should be as an O-H bond.

Hi, the video is very informative, but I don't understand one thing about fructose. I don't understand why when we get the ketone group, from the opening of the hemiketal group, we suddenly switch to the glucose structure and a free aldehyde group. I don't understand how we switch to the aldehyde group through the ketone group and I don't understand the connection with glucose. Thank you very much
