Spicy and snappy red hots that are great on their own or for spicing up your favorite dishes. #redhot #sausage #Sausageking
Recipe:
4.5kg(10 lbs) meat @ 25-30% fat content
90g(6 tbsp) plain salt
120g(1-½ cups) nonfat powdered milk
11g(2 tsp) pink cure #1
50g(¼ cup) Sugar
35g(¼ cup) Sweet paprika
20g(3 Tbsp)g Cayenne pepper
20g(3 Tbsp) Black pepper
10g(2 Tbsp)Crushed red pepper
10g (1 Tbsp) garlic powder
5g(1 Tbsp) Mustard powder
5g(2 Tbsp) Fresh thyme or 1 Tbsp dried thyme
OPTIONAL: 2-5g(1-2 tsp) Carolina reaper powder

    I grew up eating these, and the ones in the store just don't have the same flavor I remember. I'm absolutely giving this a try (no reaper pepper for me though). Thanks for posting this and I had not thought about a red collagen casing being available before. The ones you made look just like the ones I remember!!!!

    I thought you were going to forget to mention pickling them, I was wrong. Those would make the perfect beer snack, the heat would make the beer go down fast though! I have never had a venison red hot, that just sounds like heaven. I'm not sure I would pickle a venison one though, it would kind of defeat the purpose of using it I think. Love your channel!

    Hey when your doing snack sticks have you ever used a smoke tube and after smoking them finish them in a sous vide bath

    Great job! This one's on our list of recipes to try since we like a spicy smoked sausage and have been disappointed by the so called 'hot links' we can get in the store around here (They're basically a slightly spicy hot dog in a red casing).

    Where do you get the Carolina reaper powder from? Sounds great. And I’ve never had a pickled sausage before that kind of sounds weird to me, but I’d try it

    Thanks for the recipe. Funny, just like here, whenever I start cutting meat for the grinder my big white german shepherd girl parks herself right next to me, you know, just incase I might accidentally drop a chunk. Your girl looks like she's ready to munch !

    How long you put them in hot water and what temp?

    When I put them in the water, they are already fairly warm, so it usually takes 20 or 30 minutes. You just want to make sure they get to 155 degrees in the middle and stay below 180 so the fat doesn't run out of them.
