Rebalanced Jungle Bird & Paul of the Jungle | Cocktail Fridays

This week we revisit the outdated Jungle Bird recipe to make it far more palatable for craft cocktail enthusiasts, with the help of the PKNY rebalanced Jungle Bird, and Latitude 29's Paul of the Jungle. Two great riffs on the decades-old Jungle Bird recipe from the Aviary Bar.
PKNY Jungle Bird by Giuseppe Gonzalez
½ oz Lime juice
1½ oz Pineapple juice
½ oz Demerara syrup
¾ oz Campari
1½ oz Blackstrap rum
Paul of the Jungle from Latitude 29
½ oz Lime juice
2 oz Pineapple juice
½ oz Sweet vermouth
⅛ oz Campari
½ oz Averna Amaro
¾ oz Bourbon
¾ oz Blackstrap rum

    Also, I failed to mention that I’m with you on the unbalanced use of pineapple in cocktails (and no one loves pineapple more than Vino). I tend to never use more than 1.5 - 2 oz, no matter the specs.

    Thanks so much, Vino! Glad to hear you agree, especially from an actual bartender like yourself! Orange juice is probably still #1 on my destroyer-of-cocktails list, but pineapple can muck things up once it passes that 3oz threshold. I've seen Jungle Birds survive the 4oz amount only when using stuff like Smith & Cross or Dr. Bird. Thanks again for watching! Cheers!

    Yes! It’s also used in things like Beachcomber’s Gold, Tortuga, and the 1970s version of the Zombie! It’s a weird flavor to add in the mix

    Thank you for watching! I love a good Jungle Bird, so I'm always interested to explore riffs on it. Replacing the dark Jamaican with a funky gold rum can also make for an interesting flavor

    Can’t wait to try both! Absolutely love Demerara sugar. Started using it for simple syrup a couple of years ago and found myself using in place of regular ss often.

    absolutely, it has such a rich flavor! "Paul of the Jungle" is definitely unique, I recall not enjoying it as much as the revised Jungle Bird, but I appreciate that it's at least very *different* from the Jungle Bird in flavor, a deliberate Riff! Cheers!!

    Thank you, Stephane!! Ya, that Bourbon one was not what I expected! Much more bitter than anticipated, I thought the amaro would sweet-spice it up a tad, but maybe it was the overproof bourbon that brought it down into that extra-bitter realm. Thanks for watching!

    @@CocktailFridays well I’m a bitter bitter person which lines up to this 😉 . I do like the variant Jungle Bird from Jason Alexander of Tacoma Cabana that swaps the demerara syrup with Passion Fruit syrup for even more complexity and a little tartness.

    I was lookingat the intro and saw 4 ounces of pineapple juice... I just bought some 8 oz cans from trader joes and was like I'm in, can use one can for two drinks... then I'm like big pineapple corp? Ha, such a great opening. I really want to try the unbalanced bitter Paul of the jungle. Probably will have to make both though.... I need Campari!!! My suit should be ready at the dry cleaners in ninety-minutes, so I'll have to get some then... Such great production work!

    Thanks so much, Matt! Ah yes, good to have Campari around for all kinds of reasons, can make a Negroni if you're not feelin rummy, too! Ya the 4oz pineapple version is def. too juicy, but it pairs well with an overproof rum or funky rum like Smith & Cross / Dr. Bird. Cheers!

    @@CocktailFridays got the Campari.. my wife honestly thought using up our Campari and two other bottle of alcohol on our vacation would shut me up about not having enough room in the car…. Since she bought way too much stuff…. All set for some good cocktails again!

    I don't think the term "blackstrap" is appropriate for Goslings. Black Rum, maybe. Usually when people refer to Blackstrap they refer to rums that have added molasses or other additives to alter the flavor. Cruzan Blackstrap, with its weird maple syrup taste, is the poster child. For sure the Jungle Bird should cut down the pineapple. I prefer dark Jamaicans such as Hamilton Pot Still Black or Worthy Park 109.

    Kevin! First of all, thanks for watching, I always love when you watch because I know I'll get some solid rum-feedback since you have such a vast catalogue of rum knowledge. I had a feeling when I cast "blackstrap" onto Goslings that I was making a mistake there. I should've known with the missing molasses bit, I'll keep it in mind!     @@CocktailFridays I have literally done the same thing on one of my video’s calling it black strap rum. I meannnnn, it’s easy to do when you are thinking about 100 other things while filming and it’s Black Seal…I mean they both start with black…sooo..We forgive you! Easy to do. So much work goes into your videos. We get it!
