~ Glazed Beets recipe ~
Boil the beets until fork tender. Once fork tender, place the cooked beets into a bowl of icy water, the skins will fall off in the bowl. Once they’re cool enough to handle take out of the bowl, gently remove the skins, and discard. Slice the beets into rounds and arrange into a baking dish. Sprinkle with Vegan Feta and drizzle with Balsamic Glaze. Roast in the oven at 450 degrees F for 5 minutes. Serve with fresh basil.
Vegan Feta
1 1/3 c almonds
1/4 c cashews
1/3 c lemon juice
1 T olive oil
2 cloves garlic
1/2 t salt
1/2 c water
Process all of the ingredients in a food processor until crumbly. Store in the fridge.
Balsamic Glaze
1/2 cup balsamic vinegar
3 tablespoons maple syrup
Add balsamic vinegar and maple syrup to a small saucepan set over medium heat. Once the mixture begins to bubble, reduce the heat to medium-low heat and allow to simmer until reduced by half, about 10 minutes. Remove from the heat and serve warm
~ DRINK RECIPES ~
Lion’s Mane Smoothie
1 frozen banana
1 c mixed berries
1/2 c homemade almond milk
1 T hemp seeds
1 t Lion’s Mane from Anima Mundi
BLEND INGREDIENTS UNTIL SMOOTH
Hot Chocolate
1 c home made almond milk
5 medjool dates, pitted
1 t cacao powder
1 t Euphoria powder from Anima Mundi
BLEND UNTIL SMOOTH THEN HEAT OVER THE STOVE IN A SMALL POT FOR 5 MINUTES AND SERVE WARM.
Golden Turmeric Latte
1/2 c canned or fresh coconut milk
1/2 c water or other plant milk
1 t Golden Moon Milk from Anima Mundi
2 T maple syrup

    I could write a book about my parents. They had me much later than my siblings so I was their little buddy always. I’d go to work with my dad or run errands with my mom and I was convinced they were super hero’s. Kids notice. They might not know why but they know they are safe and happy because their parents out in effort

    Being a parent is definitely hard. Though the children don't always realize what you're going through, seeing them happy and at peace is beautiful. I love how your kids come running, excited to eat their food. Congrats on your beet harvest!

    That last part made me cry. I have two that are 14 months apart who are 5 and 6 now, and an almost 1 year old. I homeschool them and my husband is working full time and finishing his degree full time. I am exhausted and have full hands and a very full heart. Thankful for your mama's wisdom and the words from you.

    I'm crying with the end of your video, so beautiful and so powerful words, I miss my mum so much, she died two weeks after I gave birth to my son, he's five now, I wish I could ask her million things everyday... and I truly would love to travel in time and see my mother with her 5 young children, just being a mother... I now understand so many things, why she was always falling sleep everywhere for example hahahah also my dad a super hero, I still have him and I'm so glad. Thank you Ellen for making us don't forget about the hard work our parents did, and do everyday for us :)

    I’ve always loved my mom. Never doubted it for a day but WOW my eyes opened and my love grew for her once I had my oldest. I was sobbing sending her texts telling her how much I appreciated her and loved her. And you’ll never understand how much your parents love you until you have a child of your own. Then it’s like wow, my parents feel this way about me? It’s amazing.

    This made me cry. Its been rough lately with my boys arguing among other things and I am definitely feeling stretched. I loved when your mum said "you stretch and you grow" it made me realise that this moment in our lives is helping me to grow and now I'm grateful for this part in my parenting journey.     Absolutely beautiful. I really (really) needed this today. Also, eating vegan is a natural form of Self Care. As a mother who has made poor and unhealthy food choices in the past-with devastating health issues that resulted in expense medical bills and many trips to the ER and hospital-I now realize that Self Care is vital. There is a difference between spoiling yourself and wisely nurturing yourself so that you can nurture others. You can’t give what you don’t have.     Ellen, this is one of your best videos ever.! It spoke right to my heart. Sometimes I think we wake up on auto pilot, hurrying through the day to make sure all the “stuff”gets completed. We don’t stop what we are doing to have conversations with our kids or engage with them. Time sure does fly by and pretty soon our children are all grown up. All that time was lost just so I could have a clean house. Thank you for showing me to slow down, be present and enjoy this precious time. It’s SO worth it!

    I also saute the greens with garlic, sea salt, olive oil along with other greens from the garden. Smoothie, , sautéed, or any other recipe - yummy and so good for you! on a different note, along with nurturing others I feel that it so important to have self care (versus self-indulgence) and sometimes that does require that we are "selfish". We cannot serve others if we are drawing from an empty well. You seem to be good at balancing all of that.

    Being a parent makes you appreciate everything your parents did to you, am so grateful I still get to see my parents and tell them how thankful I am . My baby has taught me a lot and am still learning, some days are tougher than others but at the end of the day when he lays in bed, am in total bliss knowing I have the greatest present in my life .     What a beautiful picture of the rewards being parents but also to all those parents who worked hard doing what they knew best. As my mom is so far away and raising her grandchildren.     Oh my! This got me!! Having a ‘troubled’ childhood myself, i am constantly trying my best to be there for my kids as much as possible but yet also feel like such a failure because I don’t have much money, because I sometimes do get impatient, because my marriage isn’t a perfect role model for them because im currently overweight snd struggling to get healthy.. I could go on! I recently took my son out of school to home educate and it’s been hard, I feel like it’s for the best but he opened up to me a little the other day and he’s having feelings no 12 yo should have to have and it makes me so sad that he’s not as happy as I’d hope he would be. Forgetting the written work for now and concentrating on mental health is my way forward!     You must be doing the right thing if your son trusts you to share such raw feelings. I don't think it's as uncommon as you might think it is--especially with what is happening n the world. Try to find your tribe. Maybe a meet-up for a vegan potluck. Maybe you can find other homeschooling parents with similar values. You've got this! 👍🙏

    You had me tearing up at the end. Since I had my son I often mourned my past independent life and felt like I could never get back town that. This Video made me realize that everything is just a phase, and that the years of sacrificing yourself to your children pass by so quickly. I may not get lots of time for myself for a few years, but all will be caught up on later. Kids are only little for such a short time.

    I absolutely needed this. I too have 4 kids like you. 3 boys and 1 girl. My oldest is going to be 7 years old and then i have a 4 year old, a 2 year old, and a 8 month old baby. Your life is my goals. I dream of documenting my life and my childrens life and capturing these beautiful moments but also the unedited raw moment and sharing it with the world and eventually making enough to have my husband home with us. We'd love to homeschool and be fully vegan just havent been able to commit. Thank you for sharing your life and making me see that it is possible.

    Crying this hit me so hard I’ve always, always wanted to be a mom for as long as I can remember. My early teenage years were rough, my mom worked so hard to help me but I still was a teenager.. and rude at points. (Ugh teenagers) As of now though being 19, nannying for 3 years now with kids i love like my own i have already grown to appreciate and basically be in woah of how amazing my mom is. Every mom is. I still can’t wait to have kids of my own but until then I’m thankful I have this life and an amazing mother and kids I can watch!
