2 things you seemed confused about (though you probably won’t see this) 1- they mushroom at the start on 200cc sometimes if there isn’t a shortcut that will save enough time. This is so their combo instantly accelerates whereas it normally takes a handful of time to get to full speed 2- coins contribute a ton to your max speed so going around shortcuts (such as in boo lake) allows them to gather the coins they need and ultimately saves more time. In this example, this is after they use the mushroom at the start, which backs up the point above Hope this helps it make more sense!

For a while, before Nintendo shut down the servers, I was number four in the world for Mario kart 7 on rainbow road. You would actually be slower if you tricked in some of those places because you would drift out too wide. It's very calculated when it comes down to the end of it for where to trick, where to use boosters, whole nine yards

Fun fact: the start up boost in this game doesn't get you to top speed so WR holders opt to use it then to get to full speed if there is no shortcut on the track that will save more time than being at top speed (if that makes sense) and i believe youre right about the ice world hslfpipe strat shrooms after cannons are used for the same reason as the start up boost: DK mountain doesn't have any shroom spots so its best to get to top speed after the cannon as fast as possible

People usually don’t take shortcuts on the first lap i now noticed because of momentum you need to build up then consider your mushrooms on other gap cuts like Rosalina ice world didn’t use the mushroom at the end because it’s 200cc usually you need to build up momentum so you can get more speed then use your shrooms in other areas I used to think that gap cut at the beginning was possible in 7 but idk if it’s possible in this game might be better to experiment yourself and practice. My personal favorite kart is biddybuggy with small tires and Mktv glider while I optimize switching between the Mr Scooty or Standard ATV or teddy buggy !
