To Make Rava Kesari
Ghee - 4 1/2 Tbsp
Cashewnuts
Raisins - 1 Tbsp
Rava / Sooji - 1 Cup
Sugar - 2 Cups
Water - 3 Cups
Orange Food Coloring - 1/4 Tsp
Saffron
Oil - 2 Tsp
Cardamom Powder - 1 Tsp
Method:
1. Add ghee, cashewnuts and raisins to a heated pan. Roast them until are golden brown in colour. Keep them aside.
2. To the same pan, add ghee and sooji. Roast for 10 mins on low flame / until light brown in colour. Keep it aside.
3. To a pot, add water and let it boil. Then add the food colour. This is optional.
4. Add in the roasted sooji and cook until it thickens and add saffron. Mix well and add ghee. Then add oil.
5. Mix well and cook again.
6. Add sugar only after the sooji gets cooked completely. Mix and cook until sugar melts fully and the mixture is thickened.
7. Next add the cardamom powder, roasted cashews and raisins.
8. Add ghee again and give it all a quick mix.
9. Turn off the stove and serve Rava Kesari hot!

Can we use amother food colouring?
It is called Kesari Bath in Karnataka First mention of this dish is in the epic Manasollasa Written during the reign of Karnataka emperor Chalukya Someshwara III It was called Shaali Anna in that book A combination of Kharabath ( spicy dish made of rava and vegetables ) and Kesari bath is a favorite dish both at homes and hotels all over karmataka
In my experience US measuring cups are 237 ML, I think Indian measring cups are slightly larger. I'll have to try other measuring cups? Thanks for sharing:)

Your way of preparing this classical indian dish is very devastating. You have invented adding oil to rava kesari is wrong. 1: 2 : 1 consitency of sugar water rava is preferred.
They’re not CASHNUTS, but CASHEW NUTS when you pronounce 😏
