I really dig this seemingly universal practice of making garlic oil and chips as a part of steak prep. Also, cutting your steak I to bite size pieces as it cooks to get maximum crust surface area and proper but quick cooking?! Genius.

The guy who does this is obviously a fan of the niche", plus many people believe that the viewership funds his videos - maybe they do or maybe they don't - but he likes this stuff. Personally I think it's brilliant marketing and little else! How else do you convince people to spend sometimes the equivalent of a monthly car note on a few vegetables, a couple of prawns and 1/3rd of an 20 oz. steak, and base the ridiculous price on the beef being "rare" or some other nonsense? There are 10,000's of the cattle that provide this beef...they (imo) only slaughter so many to keep the prices high...and it works!

It is from the days when metal knives were relatively expensive, so the knives were reserved for the chef. It facilitates ease of dining for the guest and it may increase the ratio of cooked surface to interior volume for a certain taste and texture experience depending on how the beef is cooked.

A slice of onion, courgette, pumpkin,a pepper, a few garlic crisps and a piece of beef that is raised to be as fatty as possible. £200 please. You can get a steak with all the trimmings for £15 quid elsewhere. Perfectly good beef. My take on Japanese beef is similar to goose liver pate in that there raised to be fatty all through there bodies. I can do this meal for myself at home for under 10 pounds, it just won't be the special fatty steaks that seem to be so popular.

I wonder how, in every video, the chef is able to make such a beautiful crust, without cooking the middle parts of the meat. They do not seem to use a high heat, nor long time to make that crust. Is it the meat? The salt? Or what? I use Australian grain fed beef, and always ended up either with not so good crust + a well-done steak, or no crust and good medium rare steak.

Good presentation. Visual is part of it all. Another big part is side dishes or accompaniments that actually accompany, are light, refresh, and do not leave you with a stuffy feeling that detracts from what is obviously the star of the show, the poor, innocent, trusting, unsuspecting [dead] cow.
