Lol SoCal girl here, Elotes carts are most COMMONLY made from actual shopping carts lifted from the local stores lol. Imho if the Elotes ain't comin out of a stater bros shopping cart, I don't trust it. Elote = corn. It's basically a street corn vendor. Elote in this context is grilled ears of corn that are covered in butter and other various toppings, usually a slathering of Mexican mayo, cheese, and various spices and sauces. It's very much a South southwest thing, or else in places with heavy mainland Hispanic populations.
