材料 Ingredients:
五百克魷魚 500g squid
兩片潮州鹹酸菜 2 slices pickled vegetables
半隻西紅椒 1/2 red bell pepper
兩棵唐芹 2 celery
三粒蒜頭 3 cloves of garlic
兩片薑 2 slices of ginger
一個紅蔥頭 1 shallot
兩隻紅椒仔(不是必要)2 chili (optional)
調味料 Condiments:
一茶匙糖 1tsp sugar
一湯匙魚露 1tbsp fish sauce
一湯匙紹興酒 1tbsp Shaoxing wine
一茶匙生粉加一湯匙清水 1tsp starch in 1tbsp water
適量麻油 sesame oil

張妈媽您好,我以前都有做呢味餸,但不知为何就算把外面層衣去除後炒出嚟都有層白色膜很靱的,有時喺餐館食的都係咁,所以之後再冇做呢个餸。

Glacier Y 你好!多謝讚許!墨魚有條墨魚骨在背面,劏開後將它去除,其他內臓清㓗和魷魚一樣,但由於墨魚煮熟後質感較魷魚結實,故汆水要用𧎚眼水燙15秒便要倒出沖洗備用,煑時亦不要過熟,否則會變靭,多謝收看和支持!😊

ABC DE 你好!買回來的咸菜都需要浸水約20分鐘,然後切些試試,如覺得咸味啱自己便可,浸太久咸菜味會變得太淡味。謝謝收看和支持

Amanda Ireland 你好👋其實中式鑊和平底鑊,我都喜歡用,平底鑊喜歡它有枝手柄,有時不用鏟,拋拋鑊也可以,但蒸餸或蒸糕點便會用鑊了,適當的廚具對於主婦們,好大幫助㗎!謝謝支持👍祝新年健康快樂🎉😊💕

怎樣選擇鮮魷啊?怎為知新鮮啊?
以前处理鱿鱼一知半解,例如鱿筒界花永远在双翼那一面,不会飞水,煮出来隐约有腥味。看张妈妈示范,很多宝贵的经验之谈,可少走很多冤枉路,亦减少浪费食材做试验之罪恶感。
