Quick & Simple Hot & Sour Soup Recipe!

A classic Chinese dish, this hot & sour soup will keep you coming back for more and more with it's addicting spiciness from the Sichuan peppercorns and mouth watering sourness!
Ingredients
200g sweet potato noodles
200g pork mince
3-4 Gherkins, finely chopped
4 spring onions
3 garlic cloves
A thumb size piece of ginger
Handful of coriander to garnish
1 tablespoon Shaoxing wine
½ tbsp dark soy sauce
2 tbsp roasted peanuts skin on
12 dried chillies
1 tbsp sichuan peppercorns
300ml chicken stock
2 tbsp light soy sauce
1 tbsp dark soy sauce
2 tbsp Chinkiang vinegar

    I've only tried to make hot and sour soup once, and it was an absolute fail. This looks completely different to the recipe i tried, so i'm extremely intrigued and excited to try it. It looks amazing!

    Finely minced green onion will do the trick at the end; substitute would be firm tofu and pickled radishes thinly sliced

    Do you have a preferred dried chilli for this? I'm mostly looking on Amazon and unsure what would work best for Asian style cooking.

    _Why does the recipe list "300 ml" of chicken stock when the video shows approximately a liter/quart being used?_ I made homemade chicken stock just for this recipe. I am SO glad I did. After realizing how little stock the recipe calls for I watched the video again... at 5:39 you can see the liter/quart measuring cup/bowl. YOU NEED A LITER. Oh, make chili oil/paste keep seperate... add it to your taste... Don't use what Jeremy did unless you like pain (And I love spicy food) In summation, this is a great recipe... just with a couple tweeks. _Maybe correct the recipe in regard to the chicken stock volume?_

    Kimchee is also a good substitute for yacai, although be aware of how much chili that adds to the dish
