• 1.5 pounds beets roasted, steamed, cooked
• 1 cup vinegar white or apple cider vinegar
• 1 cup water
• 2 tablespoons sugar or 1 tablespoon maple syrup/honey
• ½ tablespoon sea salt
• 5 whole peppercorns, optional
• ½ teaspoon dried dill or 1 tablespoon fresh dill
