Quick Chicken Shawarma Taco in under 30 minutes | WEEKNIGHTING

Here's my take on a quick chicken shawarma "taco" that you can make on a weeknight. It gives me everything I want out of a shawarma sandwich including the deeply flavorful charred chicken, but is a little lighter than the traditional version and comes together in 30 minutes or less. I've eaten this meal literally 5 times in a row between R&D and leftovers and can honestly say that I'm not sick of it yet.

RECIPE
------
CHCKEN:
▪2lbs boneless skinless chicken thighs
▪200g or 3/4c plain greek yogurt
▪20g lemon juice or juice of 1/2 large lemon
▪10g or 1Tbsp garlic powder
▪1g or 2tsp dried thyme
▪5g or 2 1/2tsp ground cumin
▪1g or 2tsp dried oregano
▪2g ground coriander
▪5g garam masala
▪1g or 1tsp ground black pepper
▪20g or 3 1/2 tsp salt
Add all ingredients to bowl and mix to combine and coat chicken well. Cover and let marinate in the fridge for at least 20min or up to 8 hours. Add a little less salt if marinating for 8hrs.
Preheat broiler to high with oven rack set as close to broiler as possible.
Line sheet tray with foil. place thighs on foil and cook under broiler for 10-12 minutes until a bit of char has developed. After desired amount of char on side 1, flip thighs to second side and continue cooking for another 10-12mins or until internal temp reaches 165F/74C or above. ALWAYS KEEP AN EYE ON CHICKEN while under broiler. Things can burn quickly and cook time varies depending on your oven.
Thinly slice.

TAHINI SAUCE:
▪150g or 3/4c tahini (loose texture preferred as shown @1:27)
▪30g or 2Tbsp lemon juice
▪100-120g or 1/4c+ water (use more water if your tahini is on the thick side)
▪2g or 1/3tsp salt
▪1 garlic clove, roughly sliced
Add ingredients into a high sided container and blend with immersion blender (or in conventional blender) until well blended and saucy.

TOMATO CUCUMBER "Pico de Gallo"
▪150g or 3/4c diced tomatoes
▪125-150g or 3/4c diced cucumbers
▪10g or about 1/4 bunch of parsley, chopped
▪3g or 1/2tsp salt
Mix to combine.

PICKLED PEPPERS (pepperoncini's also work if you don't have time to make these, but i like the sweet pop of my homemade pepper)
▪6-7 banana peppers, cut into rings / 1 quart
▪400g or 1 2/3c water
▪400g or 1 2/3c white distilled vinegar
▪80g or 1/3c sugar
▪8g or 1/2Tbsp salt
Combine water, vinegar, sugar, and salt in a sauce pan. Bring to boil. Add peppers and stir to submerge. Remove from heat and allow to cool. Store in the fridge until ready to use.

ADDITIONAL TOPPINGS:
▪Flour Tortillas (I'm using store bought today, but you can find a recipe for homemade in this vid: • FRIED SHRIMP TACOS wit... )
▪Sliced dill pickles (I'm using bubbies for this recipe)
▪Sambal chili sauce
▪Thinly shredded lettuce (I'm using little gem here)

TO BUILD SHWARMA TACOS:
Heat flour tortillas in a nonstick skillet over medium until soft. Keep warm in tortilla warmer. Build tacos by adding chopped chicken, 2-3 spoons of pico de gallo, pickled pepper slices, sliced dill pickle chips, sambal to taste, plenty tahini sauce, and a generous handful of shredded lettuce.

    Love the weeknighting idea!! I need something in a reasonable timeframe with available ingredients and I love some cultural diversity in my food. Helps me get familiar with different flavor profiles so when I do want to go out I will be more adventurous with my restaurant choices.     This is excellent, more people need to start making shawarma at home, it's so easy! I took it one step further and bought a standing rotisserie grill, it's amazing for shawarma and it wasn't expensive at all. Can really recommend it to anyone who wants to make dishes like these.

    Another hit! This will become a regular in the rotation. Would even make this for company. So tasty! My husband doesn't like cucumber, so I diced some on its own for myself and made our usual tomato salsa for tacos (diced cherry tomatoes, minced red chili, juice of a lime, lots of cilantro, splash of olive oil, salt -- the lime from the salsa paired extremely well with the spices on the chicken). Topped ours with shredded cabbage instead of lettuce because it's what we had. Didn't have any dill pickles but had homemade pickled red onions and pickled jalapenos which were awesome on these fusion tacos. Just great! Thank you, Brian, for another winning recipe.

    Tried this last night and it was excellent. The tahini sauce was next level - superb compliment to the chicken. I chucked in some red onion into the tomato/cucumber salad and I would recommend doing that.

    I can't express how delightful, and delicious this recipe is while still being somewhat healthy. It's amaaaazing. I did a few tweaks, like making a garlic mayo sauce instead of tahini sauce, making the tomato salad with cilantro and a little lime juice instead of parsley, and adding a bit of cinnamon to the marinade. Truly excellent and I especially love the juicy flavorful chicken in combo with rich garlicky sauce and acidic ingredients to balance it all 😍😍😍😍. Thank you!!!!!!!

    Looks great. I find it interesting that shawarma in Canada (or Ontario at least) looks different. The shawarma I am used to has pickled cabbage, pickled turnips, pickles, onion and tomato. Usually hummus, tahini and hot sauce are the condiments.

    Finally got around to making this one, best thing I've made in a while. Made some pita bread to eat it on too. The broiled chicken with the yogurt marinade is a technique I will use for other dishes as well, it was very juicy.

    I made this a few days ago, I imagined it would be delicious but was surprised at how yummy every bite was! I left out the tahini sauce though because, even though I try, I just cannot like tahini! I made a spicy mayo instead. This recipe is an absolute winner!

    I made these a couple of days ago, for my roommate and a friend. Only difference was I used another dressing and adjusted the pico de gallo a bit (added a bit of onion, 2 cloves of garlic and a solid handfull of basil). And we all loved this. The marinade is so good and if you have the option, I highly recommend throwing the chicken on a (gas)grill. The grilled flavor compliments the marinade so well. This is definitly on the weeknight menu from now on. And with a gas grill it's not really a hassle :) Thank you for this great recipe! :D

    I made this tonight! It was very good, even though I didn’t get great char and it took me longer. Next time, I’ll use a little less yogurt in the marinate and throw the chicken on the grill. I served with some rotis you pan fry up real quick (sold in the freezer aisle at your local Indian grocery store). Very tasty!

    Very cool, Great marriage of my two favorite cuisines, mexican and middle eastern. I used to try to replicate chicken shwarma or Shish Taouk as we called it in Montreal by broiling chicken thighs with loads of garlic. I would buy the pickled turnips at the grocery and make a garlic sauce or use hummus to marry the flavours. Would use real pitas and dress with chopped tomatoes and onions. I like the idea of the tortillas just because their shelf life is so much better and the pico would make it a bit lighter. well done.

    Made the chicken and "pico de gallo" for dinner tonight and it was incredible. Super flavorful chicken (marinated 5 hours) was perfect along with the fresh pico. I was out of tahini, so I ended up making a tzatziki sauce and couldn't get fresh banana peppers so used jarred banana peppers. Perfect light, healthy dinner! I used FF greek yogurt too.

    @@BrianLagerstrom update: leftovers make for great pizza. Olive oil base, chicken, mozz, and cinis in the oven, add pico and tahini sauce when it comes out.

    Had never seen your channel before today but this looked so good I made it for dinner and it's amazing! Used breast and pulled the calories down on the tahini sauce but still amazing. Subbed for more of this series!

    Fun food, as you said! I think that a shawarma taco is a great meeting of Mexican and Middle Eastern food. I gotta add sumac to my shawarma spice blend but that's not a widely available spice. Great idea for adding pickled peppers to the taco. I love pickled vegetables but onions and peppers are at the top for sure. They're wonderful for adding dimension to many dishes.

    I use a serrated vegetable knife bought at Walmart, as well as steak and paring knives with serrated edges, for easily cutting soft produce without smooshing it.

    I've made the pickled peppers recipe in the description a couple of times. It took me forever to find it today even searching the title. Finally I had to go through a bunch of the videos and look under the description. Luckily I finally found it. :)
