    best way is to cover them as well so effectively they get steamed in whatever liquid you put in the pan, water, oliveoil, wine, or a mixture of the three. heating the mussels uncovered is not heat efficient. whereas when covered, the heat is all conserved which means the mussels get both fried in butter/oil, and steamed by the trapped steam off the liquids. i normally like to put a liquid mixture of water, and olive oil . i dont drink white wine, only port wine, but people who drink white wine-which is mostly women to be fair, can add a dash of wine to the liquid too. steam mussels in frying pan, or wok or pasta pan, covered , on full heat, mussels are done in as little as three minutes. i dont find overcooking them effects their taste at all. but it can cause them to fall apart as mussel meat is quite delicate. frankly, being extremely ill and on my own, i limit cooking to absolute minimum now. i do every in the microwave, and you can use the microwave just like a steamer. just stick the mussels in a bowl, put in some liquid, cover with a plate, and microwave on full for three-five minutes. they will be very hot, and obviously all the shells will,be open proving they are cooked. drain the liquid. serve with half a lemon's juice squeezed over it and a generous sprinkiling of sea salt. mussels are the easiest and cheapest source of protein in the world. wonderful food. i eat them every other day.

    nice I love NZ green lip mussels. I'm on Keto now so the butter and olive oil are fine. I'll just replace the noodles with Miracle noodles which have zero carbs and I'm set to go

    It’s a shame you got the already cooked ones. I live in NEW ZEALAND and we just buy them whole, raw, put them in a pan with same garlic and butter like yours…it’s way way way more fresh….and tastes great💖

    The olive oil is added with the butter to keep it from burning. Otherwise you can end up with "brown butter". If you are that concerned about nutritional value then serve a salad with vinaigrette. :-D

    It's sad to see you cooking the hell out of the mussels. They are already cooked in the 1/2 shells All they need is warming up. otherwise they will get tough to eat. A Kiwi avid mussel eater.

    New Zealand Greenshell mussels are fantastic, But BEWARE!!!!! of what can be inside them. Often they will have tiny crabs in them. No the mussels werent eating the little crabs but rather the little crabs act similar to a parasite to the mussels attaching themselves inside to mussels as both protection and a food source. Like a little home for the crabs. 70% of the mussels are known to have the parasitic crabs. The crabs are not harmful to humans at all. 2nd. Mussel beards. Mussel beards can also be found inside mussels. not particularily harmfull but its best to remove them before eating. 3rd. AND THIS ONE IS IMPORTANT> Thorned sea grass. Sometimes these mussels can have a type of sea grass lined with little barbs all pointing in one direction.. DO NOT EAT THEM. because the thornes are all aligned in one direction it can easily make its way in your throut and if pointed in the rite direction , makes it impossible to cough up as the barbs prevents its motion going the opposite direction, These thorns can pry into your flesh in your throat, and become more than a nightmare requiring medical emergency to remove. If medical attention is not taken it will take weeks before the body's acids begin to break the grass down enought to pass. Its a freaking Nightmare!!!. imagine having something logged in your throat for weeks on in, its happen to me so please PLEASE P L E A S E heed my advice. check the mussles interior before eating.

    No need for it at all, just use white wine and at the end some coconut milk or cream … plus your favourite herbs or spices.
