flautas or tacos dorados, how i’ve always called them, are so simple to make and a super quick dinner idea! you can fill them with anything you want but these ones de papa are my favorite!

filling:
4 large yukon gold potatoes
1/2 cup shredded cheese
1 egg
salt and black pepper to taste
2 dozen yellow corn tortillas
oil for frying
toppings:
shredded lettuce or cabbage
sour cream
salsa
queso fresco
salsa:
2 jalapenos
3 serranos
1/4 onion
1 garlic clove
handful cilantro
1 tsp chicken bouillon
salt to taste
oil for frying
water if needed

you shouldn’t bc olive oil doesn’t have as high of a heat tolerance like other more neutral oils

Avocado oil is a good alternative for high heat
