    I’m a black male who grew up thinking only black people from the south used neck bones when cooking collard greens. I know see that it’s an overall southern thing to do so excuse my ignorance lol. Thanks for this Paula, I love your videos ❤️

    I like a little stems in my collard greens. Maybe it's just preference. I grew up in south GA and the only way my dad cut up collard greens is he julienne cut them and the would be the most beautiful thin ribbons of collards. Till this day he is 73 still cutting up everyone's collard greens. I am convinced they taste better that way.

    That's the way I like mine, too. I also like the stems when they are tender. They are very much like broccoli to me. I have 7 big collards planted in my flowerbeds. I never grew any before but they are easy and fun, and those big blue leaves are quite pretty.

    Mrs. Paula I have been watching you since I was 7 years old in Elementary, I used to want to be like you and Emerald! When they took you off of Food Network I’m not lie, I stop watching and stopped cooking. Thank God for your KZread Channel lol I am 23 now and joined the Army . Never went after becoming a chef but I am back in the kitchen 😂 I Love You!

    No salt needed with the smoked neck bones, they are very salty.

    Especially if you eat them the next day! That salt can take your breath away! I need room to add salty hot sauce to mine too... so I definitely don’t need the salt when I’m cooking them.

    Some neck bones can be very Salty, it all depends on the brand of the Neck bones, Paula used Salt, when she could have used Bullion cubes.they have less salt and give your greens a very good flavor.

    Hey Miss Paula. I'm a Tennessee girl transplanted to Georgia for the past 30 years. We had mostly mustard and turnip greens when I was growing up. I love the convenience of the bagged greens but I still rinse my greens after picking out the stems. I don't want anything to mess up my pot liquor.

    There is absolutely nothing wrong with a traditional pressure cooker. People act so foolish about them. I've used them my entire life, from the 1960s till now.

    My favorite next door neighbor gave me her secrets to the most amazing greens. I use some smoked turkey and some fresh turkey and wet chicken base for the broth. My seasonings are fresh garlic and onions. salt, pepper, onion powder and garlic powder, hot sauce, some crushed red pepper and nutmeg. I use Apple cider vinegar or sherry vinegar just a splash. When it comes to the greens I try to get as many different kinds I can find all together.

    Some delectable greens. I add a little bit of sugar to balance, the tart of the smoked meat and greens. I also add a few fresh slices of jalapenos and a little apple cider vinegar while cooking.

    Paula, I must say that I enjoy your KZread channel better than your Food Channel program. Don't get me wrong, I liked it too but you seem more in control and relaxed in this setting. It's like hanging out with friend or neighbor. I almost drooled on myself when I saw those collard greens you put in the bowl with the neck bone meat.

    My grandmother in the 50s used to pick them from her garden, along w/fresh potatoes, & cook them as follows: After cleaning (leaving the smaller stalks in), fry some bacon or fat back in the pot, take out the meat & leave in the grease, add 2" of water (as cooking add more water if needed), put in collards, add in peeled/cut potatoes for boiling, add salt/pepper to taste, cook until collards are tender. Add dumplings made w/white southern corn meal on top, which need to cook about 12 minutes. While the dumplings cook, the collards will slowly brown on the bottom of the pot. When they are served (w/fresh sliced tomatoes, cucumber & onion salad, & the meat u've made), mash the boiled potatoes on ur plate w/butter. Serve w/southern biscuits or cornbread & sweet tea.

    @@jeandarnell1531 smoked turkey wings, onions, some butter, little splash of soy sauce & lotta splash a tobasco sauce once they finish cooking. Always served with fried taters w/ onion, garlic, salt & pepper. And a pot of beans. Most people like pinto but I make white beans only with a little salt & a dash of herbs de province. 😋

    I’m 23 and my pressure cooker is a MUST have. I wasn’t living until I got one. I’ve made a roast in it, country style ribs, countless rice, chicken, veggies. It’s my “oh shit I forgot to cook in the crockpot” lol

    I like my collards with apple cider vinegar and some cornbread to sop up that pot likker! Every Thanksgiving, my sister puts in her request that I make collards. It's a labor of love but man they are so good!!

    I grew up in the north east and my greens were spinach. Every way you can think of. Then I moved to the south in Virginia and discovered collards and turnip greens. Yummy.

    Your show on collards reminded me that I need to get some collards. I have a Boston butt roast and I always put a bed of collards under the roast as it slow cooks and they come out really nice that way. Your are right. They are very nutritious.

    I saw this trick one time...pull a whole collard leaf through the hole of a colander and it will strip it clean.
