Pumpkin Spice Palmiers a.k.a. Elephant Ear Cookies!

Learn how to make palmiers with puff pastry, sugar, and salt-plus pumpkin spice for some fall-time flair! I absolutely LOVE French palmiers a.k.a. elephant ear cookies, and this 3-ingredient puff pastry palmiers recipe makes them so easy to enjoy at home. Comforting, light, and flaky-they’re like a cookie-meets-croissant!
First, I’m sharing how to make pumpkin pie spice at home-a staple in my kitchen throughout the fall season. Just mix cinnamon, ginger, nutmeg, and cloves, and you’ve got your very own homemade pumpkin spice mix!
Then, I’ll show you how to make palmiers using frozen puff pastry dough. Just roll out the sheet of dough with plenty of sugar, roll up the edges like elephant ears, then slice and bake your palmier cookies!
I decided to make pumpkin palmiers to ring in the fall season, or you can skip the pumpkin spice and make classic French palmiers cookies instead. (Or use different seasonings to make different flavors altogether!)

In Germany we have those but larger and we call them pig ears. 😎 Sometimes they come with a sugar glaze, so yummy! 😋

Oh never seen them before Alyssia. They look yummy. Watching you I was thinking oh would be nice with cinnamon sugar or do your sugar first step then spread butter on the "inside" then sprinkle brown sugar on then roll up and cut the same and bake the same but call them butterscotch Ears. That's how I make pinwheel butterscotch scones. 😀

Oh thank you! I LOVE CHOCOLATE COVERED RITZ! I have never made them myself but I would use chocolate melts that are already tempered :)
Elephant ears (in Albuquerque New Mexico) are fresh made tortillas with cinnamon and sugar and butter. These look delicious though!!

I have never seen it . I make a gluten free flour mix of my own, so I know the source and exactly what is in it. I lost a lot of weight going gluten, gmo free, and soy free
