We fry the zucchini/pumpkin flowers in Italy! The traditional recipe call for filling the flowers with cheese and anchovies then putting them in a flour batter and deep fry them. But even frying them with only the batter are simply delicious!

She didn't just credit her, it also felt like a wholesome appreciation of her. 😄 Also, I love seeing people from different countries come together in these comments and share how they use one ingredient in a dish. You mean like the way you're not afraid to just be yourself and let it go??? The way you don't care what people think about you??? How silly you are??? How you're not afraid to show your fails when making something and it goes wrong??? Emmy, you truly are a very special person and please, please, please don't ever forget that. You reminded me of a memory I forgot even existed. When I was little, I remember my grandma making this for me once. I was a bit confused because I was like “a flower??? In a quesadilla??” And I loved it so much. I remember her making homemade tortillas and cooking them on comal. The house was full of beautiful aromas. Awesome recipe ,Amy! Just some advice , we usually sauteed the blossoms before we make it into a quesadilla. Also , you can always add the ingridients as soon as the tortilla hits the comal that way it won't burn. Finally ,an easier and more natural way to drop a tortilla in a comal is if you spread it as you turn your hand down. That's how we do it and it's easier and your tortillas end up perfectly round and flat.

Michael Annino it’s easy to cook them yourself! Lil tip: It’s much faster to get rid of the skin of the raw chiles in direct fire (they take like 3 min max) and if you don’t tolerate the spicyness you should soak them in water with a little bit of vinegar and remove the veins from the inside with scissors (i find this to be the easiest way of removing them), if you fail and they start to fall apart just stick a bunch of toothpicks in them and remove after you batter and fry them, it does the trick. I would also suggest trying Chiles en Nogada, it’s a non battered chile relleno stuffed with picadillo and dried fruits, covered in a walnut sauce and garnished with cilantro and pomegranate resembling the Mexican flag. But since it’s a patriotic dish and also seasonal it’s very common around September and scarce during the rest of the year. If you happen to get ahold of it you should definitely try it, no joke It’s the best thing EVER!

As a mexican I'm glad you enjoyed this dish, it's very simple and delicious, specially with melty oaxaca cheese (extra points if some cheese touches the comal and browns a little), the fresher the ingredients, the better, specially with freshly made tortillas. If you still have flowers you can try cooking them in a soup with some mushrooms, and maybe nopales and tiny pieces of cheese, it's super simple but satisfying.

Lovely! Just a tip for tortillas so they are softer: the recipe calls for 1cup of LUKERWARM water for each 1cup of corn flour, and let it rest at least 30 minutes 😀 and then you have tortillas approved by the Mexican abuelas 😋

When I first went vegetarian my old school Hispanic mother didn’t understand how to build meals around my new way of eating so she would just make me pumpkin flower quesadillas lol I didn’t mind they are so yummy and since I’ve gotten married and moved away I haven’t had them so this inspired me to make some :D also we didn’t find out until years later that while I was strictly vegetarian and she would give me these quesadillas and soup she was actually adding Knorr Chicken Seasoning to the soups, which the first ingredient is chicken lol I said “mom this has chicken!” She’s said “no it’s chicken flavored” and so I showed her the ingredient list she just said “oh well, at least you’ve been getting your protein”😂

You are so so sweet and have so much respect for anything you try, no matter how odd it may seem. Ahhh this is one of my favorite foods from my childhood! The way my mom makes them is she puts the filling into the tortilla right after she presses it and then folds it and because the masa is still uncooked it seals and then she fries them! Also according to every Mexican woman in my family tortillas have a right side for filling and a wrong side! The side you place other food on is going to be the one with the thinner layer!

Emmyyy!! In Italy we cook pumpkin blossoms (or zucchini blossoms, even better) by stuffing them with a piece of mozzarella and an anchovy, battering then and then proceed to frying! They are SOOOO good: crunchy and with an incredible cheese pull and the umami savoriness of the anchovy... you HAVE TO make them!

An why yes I am joking about the stapler and air powered brad nailer but not the drill driver and stainless steel deck screws. (yes, I joking about the drill and screws too)
