Ingredients
Cake
2 ½ cup (375 g) all-purpose flour
1 cup (120 g) regular cocoa powder
2 ¼ (12 g) tsp baking soda
1 ½ (8 g) tsp salt
1 tsp (3 g) baking powder
1 ¼ (250 g) cup sugar
¾ cup (150 g) dark brown sugar, packed
1 cup (225 g) unsalted butter, room temperature
2 ¼ cup (560 ml) buttermilk, room temperature
2 large large eggs, room temperature
1 ½ (8 ml) tsp vanilla extract
6 oz (170 g) bittersweet chocolate, chopped, melted and cooled
Frosting
3 cup (775 g) unsalted butter, room temperature
1 cup (250 ml) cream cheese, room temperature
24 oz (680 g) bittersweet chocolate, chopped, melted and cooled
4 tsp (20 ml) vanilla extract
½ (3 g) tsp salt
4 cup (520 g) icing sugar, sifted
⅔ (80 g) cup cocoa powder, sifted
Directions
Cake
1. Preheat oven to 350F (175 C). Grease and line with parchment 3 8-inch round cake pans.
2. Sift flour, cocoa, baking soda, salt and baking powder into a large bowl (or into the bowl of a standup mixer fitted with the paddle attachment). Add sugars and butter and blend until a crumbly texture.
3. In a small bowl, whisk buttermilk, eggs and vanilla together and add to larger bowl while mixing on low speed. Once incorporated, increase speed to medium-high and blend until smooth, about 3 minutes.
4. Slowly pour in melted chocolate until evenly blended, then scrape batter equally between prepared cake pans, tapping pans gently to remove any large bubbles.
5. Bake cakes for 40 to 50 minutes, until a tester inserted in the center of the cake comes out clean. Cool cakes for 30 minutes in the pan, then carefully turn out onto a cooling rack to cool completely.
Frosting
1. For frosting, beat butter and cream cheese on high speed, scraping sides frequently, until light and fluffy. Reduce speed and add melted chocolate. Add vanilla, salt, icing sugar and cocoa and beat until smooth.
2. To frost the cake, slice each cooled cake layer across in half. Top one layer with icing and spread. Place second cake layer on top, and repeat with remaining layers. Ice the top of the cake and finish with the sides. Chill cake to set, but it is best stored at room temperature.

    I found this cake recipe besides 3 others all claiming to be the "most amazing chocoate cake ever". I made 4 cakes in 4 days (without frosting/icing) and this one won the title of "most amazing" by everyone in my house. We had fun doing "blindfold tests" and could tell Anna's cake from the others. While the others weren't bad at all, including the chocolate cake made famous by Ina Garten, this one was a level higher in terms of richness, texture, and chocolate-y flavor. Thank you Anna. I have become a fan of yours not only because of your great receipes but also because of your down-to-earth style, helpful hints, and easy-to-follow instructions. While my waistline can't afford to make many of your Oh Yum goodies, it's really fun, enteraining, and informative to just watch you work wonders in the kitchen.

    I know, right how is she so slim?😜 I've made this cake for my husband's birthday and I too previously made Ina Garten's. In my opinion this cake is far more moist and my kids preferred it.

    I believe I have converted all the dry ingredients to metric, using conversion tables on the internet: The one thing I noticed is the typed recipe says 1 cup cream cheese, but in the video Anna says 8 ounces, which is by weight a standard 'brick' as it is sold in North America. It's not actually equal to a dry measure one-cup, which I see is supposed to equal only four ounces. Cake 2 ½ cup [320g] all-purpose flour [called plain flour in many countries] 1 cup [125g] regular cocoa powder [non-Dutch processed as Anna says in the video, it's a redder brown, Dutch processed is deep brown and almost black] 2 ¼ tsp [6.8g] baking soda 1 ½ [7g] tsp salt 1 tsp [7g] baking powder 1 ¼ cup [250g, white granulated/castor] sugar ¾ cup [150g] dark brown sugar, packed 1 cup [225g, or two sticks in US standard size] unsalted butter, room temperature 2 ¼ cup [532ml] buttermilk, room temperature 2 large eggs, room temperature 1 ½ tsp vanilla extract 6 oz [170g] bittersweet chocolate, chopped, melted and cooled Frosting 3 cup [675g, six sticks in US standard size] unsalted butter, room temperature 1 cup* [8 oz, or 226g] cream cheese, room temperature [I think 1 cup is a typo, should be 8 oz in weight judging by the appearance in the video] 24 oz [680g] bittersweet chocolate, chopped, melted and cooled 4 tsp vanilla extract ½ tsp [3g] salt 4 cup [440g] icing sugar, sifted ⅔ cup [83g] cocoa powder, sifted

    By the way I also wanted to do this to convert the recipe to reduce down to a modest 6” round cake for a smaller gathering. Turns out I just need to halve the recipe.

    But cream cheese isn't a dry ingredient. 1 cup of cream cheese is 227g / 8 oz. Just like butter, where the standard packaging is 1 lb / 454 g which is equal to 2 cups (and you get this conversion correct in your listing). Really though, given the international reach of KZread Oh Yum really should be providing these recipes in both volume and weight measures.

    don't even bother with American recipes, too much sugar, cups and ounces, mind you the fat content of butter in the states is less than europe. so many other recipes to look at. my to go frosting is ganache, easier and less fatty and less sugary... I watch these as a pastime or just to get some ideas...

    Hii!!! I’m planning on making it! Is the frosting a very sweet one or does it balance out with the coco powder and cake? I’ve been looking for a good chocolate frosting but I’m always worried about it being too sweet or bland. Also was the cake fudgy or spongey?

    @@medhanair7115 The best way to describe the frosting in very chocolate, it is sweet, but not over sweet,, very chocolate. The cake is very fluffy. This is without a doubt the best chocolate cake I ever made. It disappeared so fast could not stop eating it. MAke IT You won’t be disappointed

    I didn't have buttermilk so instead i used warm water, same amount and everything and man, it was amazing. My parents said it was the best cake ever they ever tasted and it sure was! Thank you for this amazing recipe, will try again with buttermilk too!:)

    Chocolate cake is such a simple concept and dish and it's one of my absolute favorites. Not a bunch of flavors fighting. No different consistencies ruining the bite like whipped cream with strawberry and it's seeds with the sugar cake base. It's just a plain cake and it's the simplicity that makes it such a great all purpose desert for any occasion.

    OMG...! WOW...! This is the best chocolate cake recipe in the history of baking! I´m still flipping over this! You can actually smell and taste the chocolate oozing out of the screen!     I started watching this and it reminded me that i used to watch Anna with my mum. She loved Anna and her baking. It also reminds me that nothing is as good as mums cooking and now shes gone and i will never experience that again. I miss her golden oat biscuits so much that no words have the power to describe how i feel . . . . . . Itsvlike that memory of the first time you tasted chocolate or heard the most wonderful music . . . . .no matter what, you will never experience that feeling again . . . . . . warm biscuits and love . . . . . . .

    I am repeating this review that this cake was the most amazing dessert I have ever made. It is so over the top incredible. It induces a chocolate coma. Anna's Devil's Food cake recipe is also omnipotent. I froze a portion of the black-out rendition and re-purposed it into a trifle (with a chocolate pudding, whipped cream, and -- raspberries, of course) a few weeks later.

    I have watched you for years do the most beautiful and delicious baking imaginable BUT this "TAKES THE CAKE" I am not a crazy chocolate lover like most, a little goes a long way with me BUT I still like it and I love to cook and bake. I learned from my family in France where I lived 13 years and they own a bakery 'Boulanger' but you have outdone yourself on this one in my opinion. GREAT STUFF CHEF

    I really love and appreciate that you use the spatula to remove (clean out) everything in the bowls it givea me OCD. WHEN I SEE OTHER PEOPLE LEAVE chocolate or other food in the bowl instead of using an spatula to wipe out everything inside.

    I just made the cake yesterday. Huge and I think it will easily be 4KG. Tasted real good and so chocolaty. If you're making this go then use only bittersweet chocolate. Everyone at home loved the cake. With creamy ice cold milk the cake is a delish. Thanks Anna for the recipe 😊

    I’m a fan if this “reverse creaming “method and often use it in place of the traditional approach. That said this cake is wonderful and I also like to make a soaking syrup for all my cakes and alternated between the chocolate filling and a fresh raspberry filling I make for my husbands 🎂It was a hit. TFS

    So officially.. I’ve made this cake and here is what I think.. the bread is so extremely moist and delicate that I couldn’t wait for the frosting and had a tough time stopping myself... the frosting is extremely tasty but u can reduce the over all quantity by 15% and still be really happy... and this cake is extremely big so u can divide everything into half and still have enough for 10 people for 5 days atleast.. thanks Anna.. wonderful recipe 🤗😇

    This method is known as reverse creaming. You coat your fat (butter) in flour so the gluten doesn’t have a chance to develop when mixing and as the butter melts it creates steam which adds moisture and a nice lightness to your cake
