Recipe Ingredients for Angel Food Cake:
1 cup cake and pastry flour
1 cup granulated sugar
8 large egg whites, room temperature
½ tsp cream of tartar
⅒ tsp salt
½ cup icing sugar, sifted
½ tsp vanilla extract
whipped cream and berries, to serve
Recipe Directions
1. Preheat the oven to 325ºF (160ºC).
2. Sift the flour and granulated sugar twice and set aside.
3. Whip the egg whites with the cream of tartar and salt until foamy, then gradually add the icing sugar, whipping until the whites hold a medium peak when the beaters are lifted. Stir in the vanilla.
4. Add the flour to the whipped whites in 2 additions and using a whisk to fold in the flour evenly and easily. Scrape the batter into a 10-inch ungreased tube pan, spread it to level and bake the cake for 30-35 minutes, until it springs back when gently pressed (try not to open the oven before 25 minutes).
5. Turn the cake pan upside down to cool the cake, and do not remove the cake from the pan until completely cooled. To remove, run a palette knife carefully around the outside of the cake, and very gently around the inner tube, invert the pan and tap it on the counter until it comes out.
6. Serve the cake with whipped cream and berries, if you wish.
7. The cake will keep, well wrapped (not refrigerated) for up to 3 days.
Makes 1 10-inch tube cake.

I love your tutorial. Because you are not only making a cake, but you also explaining the science behind it.. one thing that I wish more is maybe you could use international measurement..

Latifah Yulia you can always convert it. heres the recipe with measurements by weight. 125 g cake/pastry flour 200 g granulated sugar 8 large room temp egg whites 1/2 tsp cream of tartar 1/10 tsp salt 1/2 tsp vanilla extract 60 g powdered sugar (its not necessary to sift. we're not measuring it by volume. powdered sugar also dissolves easily into the egg whites) whipped cream n berried to serve

see... "never grease the pan". i once argued with my mom when making chocolate angel cake (not with your recipee at that.time). she blamed me for not greasing the pan with butter and flour (so the cake got burned in the sides). now she's passed away and seeing this video reminds me of her. thank.you anna for bringin such beautiful memory.

@@l4rkm3ss please read again, because she in no way is being hostile to anyone (not even close) ... she just mentioned that it reminds a fun memory of a mother-daughter bickering while cooking. she even thank her at the end for helping her remember those moments of her mom

Thank you, I looked everywhere to find an angel food cake recipe with EIGHT eggs, and yours won! (didn't want to go into the supermarket for a dozen eggs and 8 was what I had already) AND add 1 or 2 tbs water and the egg whites double in size!

Made it a couple of weeks ago, turned out perfect! Today I have 12 egg white waiting in the fridge and I'm debating if I just try and make a bigger cake (scared it will take to long to cook properly in my 10 inch pan) or make individual in muffin tin instaid... Will post the result on instagram and tag you!
Try an angel food cake with chocolate whip cream frosting. I place the whipping cream in a double broiler and add grated chocolate bars to your liking. When melted and completely incorporated pour in a bowl and cover and refrigerate until well chilled. Whip a s normal to stiff peaks and frost cake. I know this sound unlikely but its actually really good.
A lovely lost taste.._I remember mom always having some angel food 🥘 cake around...dad loved it and it was just perfect after a meal...never heavy...until ice cream was added.. I miss ya momma! Thanks Anna...trying to watch all ur videos...

On cake mix boxes, it usually says to lower the temperature by 25C when using darker pans. Should we also adjust this way when following your recipes? All my pans are darker, which is why I'm asking and the last recipe came out denser than expected.

this recipe hasn't been tested with a substitute. If you replace the flour you also need to replace the protein and structure that it adds to the final product.
Can you use a Bundt cake pan?
Can we risk a layered cake based on this recipe using a Chantilly frosting and a trés leches moistening of the layers? Please respond.

Chiffon cake incorporates the egg yolks, but angel food leaves them out
I know you said that sugar gives the cake structure but if you wanted to reduce the sugar content, what would be a safe reduction please?

akramCED there are sugar substitutes that work in baking. I use stevia. It's right along side the sugar in the baking aisle.
I like how u use parchment to measure and sift ur dry ingredients...signs of a professionally trained pastry chef...right? Can u use castor/ superfine sugar?
