Seattle teriyaki may be a little bit different than what you're used to. It has a sweet and smokey flavor and features sides of sweet and creamy mac salad and a tangy and crunchy salad. We challenged Melissa Miranda to make her own Seattle chicken teriyaki faster than it takes for delivery to arrive. Was she up to the challenge?

Agreed. She’s a dear friend of mine (I ran the kitchen down the street) and can say Mel is one of the sweetest raddest humans I know. Looove her and love watching her here!

I love that you guys allow “overtime”. One of my mom’s biggest pet peeves about cooking shows is that they’re timed and she always says, “Food should be enjoyed, not rushed,” and this is definitely more enjoyable!!

You give someone 11 hours to walk across the street, they’re gonna take 10:59:59. You give them 20 minutes and they’ll take 19:59. Timed is an obvious imperative.
I don't know many places in Seattle Teriyaki Land that serve macaroni salad by default or as an option. That added unnecessary time leeching. It is usually chicken, rice, and iceburg/cabbage/carrot salad.
gotta admit Chef Melissa here able to maintain her cooking directions relatively calm, soothing, and pleasant during the rush. Props to her and the shooting crews for producing this vid !!!!
I became a fan when she started making the sauce with no measurement, eyeballing everything. The skills ! ㅠ..ㅠ
I love this challenge. She made look like a walk in the park. Chris and Andy you have some competition. I think there should be a head to head faster than delivery

As someone lives in Seattle, the mac salad is pretty rare, but everything else is spot on. Sticky rice, charred marinated chicken thighs, super simple cabbage salad with a creamy sesame dressing, and a very soy forward teriyaki sauce. That said, if you want a killer mac salad in Seattle, check out Ma'ono. Great mac salad, super spicy fried chicken.
I love her attitude towards cooking. You can really tell she loves it and hear her smiling when talking.
I already love Melissa, and now she’s out here repping Seattle and our teriyaki. Now I know what I want for lunch.

For people confused about why this is a Seattle thing/what Seattle teriyaki is, here's an explanation. The marinade for the chicken is usually sugar and/or mirin, garlic, ginger and soy sauce. It's based on Japanese fish glazes, and to be honest this version may well have origins in Hawaii or outside Washington. Either way, the prep and marinade can now be found in most states. What makes Seattle Teriyaki (it's actually more common in suburbs and small/mid sized towns in Western Washington these days than Seattle proper) distinctive are the sides and variety of marinated meats. A legit Washington teriyaki restaurant will serve white rice (usually 2 scoops), marinated meat and salad (mostly iceberg lettuce with a sugar/vinegar/mayo/sesame oil dressing). The salad is key because it's really the only part that is pretty much exclusively found in the Pacific Northwest and a lot of out of staters think it's gross. In a way Seattle Teriyaki is symbolic of Washington because it is unfamiliar to newcomers to the state, and increasingly not trendy enough to survive in downtown Seattle. So it's often most beloved by suburban and rural/semi rural people who grew up in Washington. Props to this chef for including it in it's traditional form when it's easier to modify or replace the dressing for larger audiences! Another thing, some people in the comments are saying mac salad isn't a Seattle Teriyaki thing too. I disagree. Seattle Teriyaki was invented by a Japanese immigrant and mostly spread and developed by Korean immigrants (this is why the marinades for red meats often are vaguely similar to Korean marinades). That said, I have seen places that incorporate Vietnamese and Polynesian flavors because of the background of owners and cooks. In my opinion as a Washingtonian, as long as a restaurant offers the rice/mayo salad/meat combo in some capacity innovation and any additional cultural influences are an important part of the evolution and tradition of Seattle Teriyaki. So adding mac salad actually totally makes sense even if it isn't common. What makes Seattle Teriyaki so awesome is it's diverse and dynamic immigration-driven background and the love/pride that it's created in people of races and ethnicities in Washington. Anyway, there's my crazy teriyaki rant for nyone who's made it this far. Thank you for the video chef Miranda!
took me a little bit to start watching the new chefs but theyre personalities are absolutely incredible. good on BA for actually taking steps to correct what they have done wrong in the past. Chrissy, Harold , DeVonn, Melissa, Lana, Samantha, Susan, & whoever I'm missing have more than shown why they deserve to be on display. Keep on being amazing yall!
I use my instant pot for rice all the time! I actually use my mini sized instant pot way more than the big one. It’s impossible to mess it up. I use jasmine rice. Use a 1-1 rice to water ratio. Pressure cook it for 5 minutes. Let it set or “natural release” for 10 minutes, and then release the rest of the pressure. Turns out perfect every single time. I cannot mess it up. And trust me when I say I’m prone to messing things up.

I have the ninja foodi and if I keep rice in there that long it turns mushy. The first time I made rice in it it turned out perfect and I haven’t been able to re-create it since😭😂

Also gonna echo the ???? of other Seattlelites on the Mac Salad, I don't hate the idea of it, but I associate it with Hawaii or Pac Island places not the hole in the wall Seattle/Suburb Strip mall places. Personally I prefer katsu to Teriyaki though or get a half and half combo.
I’ve had chicken teriyaki (in Seattle) countless times and have never seen mac salad. I need to find the right take out spots.....

Was gonna say, I've eaten my body weight several times over in Seattle area teriyaki, and I've never received mac salad. Otherwise looks great!

Compare this "Faster than Delivery" and the other with Andy's Episode. You can tell who is actually working in a restaurant kitchen. They are much more comfortable under the time pressure than Andy was. He was pure chaos.

Hi, in Hawaii, we add ginger, garlic, and sliced green onions and we marinate as long as possible and we do not thicken the remaining marinade as the flavor penetrates the chicken, pork, or beef.

Sitting here on my deck eating Seattle teriyaki while watching this 👀. Mac salad is not a compulsory delivery side but an add on, though all places have it. What is in front of me is: a standard styrofoam delivery clamshell container filled with rice, topped with two huge slabs of grilled chicken breast that is smothered in that incredible sweet sticky teriyaki sauce. Iceberg/carrot/cabbage salad with that equally incredible salad dressing (really, it’s so good!). This is absolutely my comfort food. Best of all, my local joint sells big squeeze bottles of their teriyaki sauce for $5. It’s a staple condiment in my kitchen!

Ayyy love seeing a Washingtonian do this :) If anyone is ever near Whatcom County in western WA, you HAVE to go to Hana Teriyaki. Wonderful hot & spicy chicken, and even more wonderful portion sizes! I miss being in that area so I could eat there whenever I wanted😭

I was confused by this too? I can’t think of a single seater teriyaki place that does, all I can think of is Aloha Island Grill in Spokane- she absolutely nailed the salad though

Try looking at more Hawaiian or pacific island style teriyaki places. I live in Oregon and you see it in places like that as opposed to more traditional Japanese teriyaki restaurants. It’s so good though.

I've been to at least 100 teriyaki restaurants in the puget sound region and I've never once heard of having macaroni salad included.
