Principles of a Healthy Diet: How Do We Know What to Eat?

(Visit: www.uctv.tv/) Dr. Robert Baron, UCSF Professor of Medicine and Associate Dean for Graduate and Continuing Medical Education, explains that your actual risk of disease results from the interplay between the genes you inherit and the diet and lifestyle choices you make. I used to eat eggs, and meats and veg and the very very small amount of carbs (litte chips or potato etc) I used to be at my exact weight I should be and felt BRILLIANT! for some reason I listened to people and started eating ALOT less of it and changed to more fruits, more carbs (starchy ones) and oatmeals and breakfast bars (basiclly more Sugars and less fats) I now am a stone or so UNDERWEIGHT and feel like SHIT! Most people would be OVERWEIGHT but I never was a huge eater, therefor I went in the other direction. My blood sugar is OK still, thank god! But I have now gone back to eating WHOLE foods, full fat milk, full fat this and that, slowly but surely putting the weight back on to my normal weight! Im 5ft 10 - age 29. I should be around the 10.5.11 stone mark, Im just around 9.5! DON'T EAT SUGAR! FAT IS GOOD FOR YOU! all kinds!

If you do not eat a sufficient amount of calories, then you want to eat greasy. So the body works. I eat big meals rich in carbohydrates. I run marathons and win races. I ride yearly on the bike over 12 thousand km ... and I would not recommend a diet rich in fats. 80:10:10 4 the win!

+jazzyjazzyjazzy There's an emerging area of insight about what to eat, as it relates to a person's body chemistry. Some people flourish on high protein diets. Some, on fats. Some, on carbs. I forget the name of the classification by blood types, but you can likely find it in a google search.

Reports of effects Xylitol vary. I'm assuming this is because of an commercial interest. The other factor is that no two people are the same, what is true for me is not always true for you. I would suggest you may want to do your own research based on data made before Xylitol and after and see mortality rates before and after. Obviously there are other factors (environment, new diets etc..) that would also need to be considered. Saying this all my lecturers (I study Dietetics) say that sugar and sugar substitutes are poisonous by nature. There is loads of data so check it out and make your own conclusions

Does anyone else find it so strange that the people are being scolded for eating an unhealthy diet when the cheapest and most readily available food in the environment is unhealthy? Looking at it from my current perspective, it's actually laughable the incongruity of the whole situation. It's like the health officials find it frustrating that no one will follow their guidelines. People are going to eat what is cheap and readily available in the environment. Plain and simple. I think America is going to fail in the next 50 to 100 years if it continues with the contradictory path of giving capitalism free reign and claiming that it is up to the individual to make wise choices. It's pure fantasy to imagine such a policy is sustainable.

From a perspective of someone who regularly ate out at fast food place and then later quit, I find your comments puzzling. I would spend up to $50 per week on fast food and fizzy drinks, during my weightier years. After cutting back on junk food to be no more than $10 to $15 a week, my budget for healthy foods didn't go up much. I was able to save on spending money for junk food, and the healthy foods I ate were sufficient for my dietary daily needs. The weight loss and better quality of sleep have complimented my savings on food. Plus, the increased use of my bike riding has lessened the transportation costs I have had to pay.

“Common sense” and truth are often far apart. Truth is being revealed that a lot of what’s in this presentation may be “common sense” and curiously, it’s one of his colleagues that presents heavily on a lot of it. A lot of what’s presented is still stuck in the regime of the last 50 years It’s no wonder things are such a mess for obesity and the like in the US and those that follow the SAD (applicable acronym) regime. If I follow the “common sense” dietary guidelines, I’m stuck with high blood pressure and cholesterol of the bad kind, amongst other things. So much of what we’ve been told in my lifetime (48 years old) is being proven to be garbage when properly scientifically-tested instead of weak epidemiological studies that rely on lousy human estimates of diet/exercise over long periods of time that don’t control for confounding variables and never can, because humans don’t remember things precisely enough if at all. Proper nutritional studies are difficult to do with a large number of people over a useful period of time because it’s like herding cats.

Americans have a particular weird problem with food, Americans have ancestries mixed with all kinds of africans, all kinds of europeans, and the native populous of america, and more recently, hispanic/latino populations as well. America is the most racially diverse country in probably human history. Those histories have significant dietary effects in the genes of existing people today. Exercise is the best thing you can do, as you can literally change the genes of your offspring and exercise increases the likelihood that your children will be born with optimal genes, but aside from that, we exist with the genes we have, most of us have all the food in the world to choose from, many of us just make bad choices. It is worth noting the average life expectancy is still about 77 for men and 81 for women in the US, which gives you roughly a 50/50 shot to make it past that number depending on your job, how you treat yourself, and tragic early deaths by a multitude of factors.

@@chdbarbarossa7203 dietary guidelines only ensure certain people get paid. He said never rely on jist one study..well why was one study, a bad one at the least, tjay made our recommendations sinning saturated fat and cholesterol? Someone got paid. Treat your hormones and you will be healthy. Eat once or twice a day to reduce insulin levels. Eat lower carb to lower insulin. Various studies also show much better improvements on all metabolic factors vs other diets. A diet rich in caloric DEMSE foods (he actually made a mistake saying vegetarian is calorically dense, which its not) A high fat diet and protein diet is calorically dense. Calories in vs calories out does not work. Its eating how humans should eat in our last evolutionary change. Industrialization has not changed our genes..we habe the exact same fenes since becomming homosapien. We became tha when we started eating lots of fatty meats especially in northern climates. We only ferment up to 5% veggies in our colon similarly to apes.. Very far in comparison to before we became homosapien.

I think this guy is only right about people who are over weight havinh a genetic component only to the extent that their system is more sensitive to all the bs and sugar they put in everything you buy. If people were more prone to be obese then why wasn't people over weight like they are now 30 years ago. People are eating dead food even the so-called organic food is sub par so people are starving nutritionally while overeating on food that doesn't feed their system. I can't believe he recommended people drink alcohol for energy. I don't know he could be right, I have an employee who drink like a fish and he gets the job done so who knows. His liver is shot and he knows it but to each their own I suppose,🤔

1:56 Vitamin D doesn't naturally exist in milk? Maybe in the pasteurized crap in the grocery stores. That's why it's added back in. Ugh. He spouts the exact same nonsense we've been hearing for 30+ years, mixes it up a bit, and then presents it as new? I'll go ahead and finish watching. But this sounds like the same dogma that's caused the obesity and diabetes epidemics we're dealing with now.

Somethings wrong in the state of Denmark and only a few people have the guts to openly discuss what that is! In europe we dont even put frucotse on our labels we only put "sugar added" which is a problem as we actually dont know what's being added to our food. Him being a schollar and researcher just makes it more trustworthy as opposed to a self-proclaimed diet evangelists out there.

Congratulations, now you know what we thought was healthy in the last century. The scientific consensus has been building recently that our ancestors had it right... For example, read the NYT article "What if it's all been a big fat lie?" You don't need to be afraid of healthy saturated fats like this guy is. We've been eating white bread, margarine, fat-free everything, breakfast cereal, etc. like this guy is advocating for decades and we're sicker than ever.

***** Why does it only have to be one problem/cause? I agree that processed foods are a problem but we also know that saturated fat is a problem because in studies where saturated fat was replaced by less unhealthy alternatives (eg polyunsaturated fats), mortality and morbidity went down. See Jakobsen MU, O'Reilly EJ, Heitmann BL, et al. Major types of dietary fat and risk of coronary heart disease: a pooled analysis of 11 cohort studies. Am J Clin Nutr. 2009;89:1425-32. ***** Yes, they also never mention that Americans started consuming a lot more calories (easy to do when you eat high saturated fat foods, oils and processed foods).around that time. If I remember correctly, Americans had about 3,500 kcalories per person per day in 1980 but it rose to 4,200 kcalories by 2000 - an increase that is quite sufficient to explain the obesity "epidemic" (and the diabetes and heart disease epidemics). No need to put it down to a reduction in the fat in people's diets - that idea is prepostererous. Almost as preposterous as the idea that Americans stopped eating fast foods high in fat because of dietary guidelines. In fact if we look at the figures, before WW1 Americans were eating much less fat and oil but the same amount of carbs and grains as now (but because people were eating fewer calories, carbs and grains represented an even bigger proportion of the average diet than today). Yet the pre-WW1 population was not noted for obesity despite having a much higher proportion of carbs and grains.and a much smaller proportion of fat in their diets. It ain't the lack of fat that's the problem and it's not that people are eating too many carbs either, despite what snakeoil salesmen might tell us. www.cnpp.usda.gov/USfoodsupply
